SHORTBREAD COOKIES WITH CASHEW NUTS

Shortbread cookies with cashew nuts are soft and melt in mouth cookies. These cookies are easy to bake at home with a few ingredients.

EASY SHORTBREAD RECIPE:

Shortbread cookies are easy and simple to bake at home with only 3 – 4 ingredients. This shortbread recipe is an easy cookie recipe that even kids or the ones new to baking can also bake without messing up. You can add any of your favorite nuts or dry fruits like raisins, chopped almonds, chocolate chips or chopped pecans. You can bake this shortbread cookie in bulk and store up to a week. These cookies are an excellent snack for the kids snack box, picnics, and potlucks. From kids to everyone loves these melt in mouth shortbread cookies.

Smart Cooking Tips:

1. Make sure to use the softened butter, leave the butter stick at a room temperature for a few minutes until the butter becomes soft this helps to mix the butter with the flour without forming lumps .

2. Adding cashew nuts are optional but cashew nuts give a nice crunchy taste to the cookies. You can replace the cashew nuts with any of your favorite nuts but make sure to chop them finely.

3. Avoid baking the cookies for a long time, bake until the bottom side of a cookie turns slightly to a golden brown. If you over bake the cookies, the cookies will not soft and smooth.

Shortbread cookies are the delicious eggless cookies with only a few ingredients. These cookies taste so soft, buttery and mildly sweet. These shortbread cookies are similar to the Indian butter cookies – Nan Khatai. Nan Khatai tastes similar to the shortbread cookies but with a flavor of ghee (clarified butter) and cardamom. SHORTBREAD COOKIES WITH CASHEW NUTS

Shortbread cookies with cashew nuts are soft and melt in mouth cookies. These cookies are easy to bake at home with a few ingredients. 

  • 1 cup ALL PURPOSE FLOUR
  • 0.50 cup BUTTER WITHOUT SALT
  • 0.50 cup SUGARS GRANULATED
  • 0.25 cup CASHEW NUTS RAW
  • 0.50 tsp BAKING POWDER
  • 1 pinch SALT TABLE
  1. Pre-heat the oven to 350 degrees and line the baking sheet with a parchment paper. 

  2. In a wide bowl cream the butter and sugar together using an electric mixer. Add finely chopped cashew nuts, all-purpose flour, salt, baking powder and mix well. Knead to a soft and smooth dough. 

  3. Divide the dough into small portions and shape them into your desired shape using a cookie cutter (I used a heart shape cookie cutter) or simply roll into small circles in between your palms and press slightly for the round shape cookies.

  4. Arrange on a parchment paper with a 2-inch space apart between each cookie and bake in a pre-heated 350 degrees oven for 10 – 12 mins until the bottom side of a cookie color turns to a light golden brown.

  5. Allow the cookies to cool and serve or store in an airtight container
