Cheesy Potato Crescent Rolls

Cheesy potato crescent rolls are an easy and delicious kids lunch box recipe. Cheese and potato filling rolled in the buttery crescent rolls and baked.

Easy Lunch Box Recipe:

These stuffed potato crescent rolls are an excellent lunch box recipe for the kids. You can use your own creative ideas on the stuffing, the sky is the limit. I use simple sliced boiled egg as a stuffing for my son’s lunch box when I am running out of the time. It is easy for the kids to have on the short lunch break without making a mess.

I prepare the potato filling on the evening and store in the refrigerator. Next day morning just stuff the crescent rolls and bake for the lunch box.

These three are my favorite stuffing so far, leftover chicken and veggies also work best!!

My favorite Stuffing for the Crescent Rolls:

  1. Cream cheese spinach stuffing: It serves as a delicious breakfast, cream cheese mixed with the spinach, garlic powder, sour cream, salt, and pepper.
  2. Cheesy scrambled egg stuffing: Scrambled eggs with veggies and cheese are the healthy and protein-packed stuffing. It serves as an excellent breakfast, brunch or lunch.

  3. Nutella stuffing: Who doesn’t love Nutella? Nutella spread on the crescent dough rolled and baked for a delicious stuffing. It tastes just like a dessert.

You could able to find the crescent rolls in every other retailer shop, in the refrigerator section. It is available in different flavors, like cinnamon roll crescent, sweet Hawaiian crescent rolls, honey butter crescent rolls,… I used the regular buttery crescent rolls for this recipe. Cheese Potato Crescent Rolls

Cheesy potato crescent rolls are an easy and delicious kids lunch box recipe. Cheese and potato filling rolled in the buttery crescent rolls and baked.

  • 1 Can Crescent Rolls (8 rolls in one can)
  • 1 no Large Potato (Boiled and Mashed)
  • 0.50 cup Shredded Cheese (any cheese of your choice I used
  • 2 tbsp Oil
  • 1 cup Onion Chopped
  • 1 tsp Salt
  • 1 tsp Red Chili Powder
  • 1 tsp Coriander Powder
  • 0.25 tsp Turmeric Powder
  1. For stuffing: In a pan, heat oil, add chopped onion and cook until the onion becomes soft.
  2. Add turmeric powder and cook until the turmeric powder loses its raw smell.

  3. Add mashed potato, red chili powder, coriander powder and cook until the spices lose its raw smell. Let the stuffing to cool.

  4. Roll out each of the crescent rolls and arrange on the baking sheet. Place a spoonful of shredded cheese on the wider part of the crescent roll, potato filling on top of the cheese and roll.

  5. Bake according to the package direction. I baked for 12 minutes on a preheated 375 degrees oven. Cheesy potato rolls are ready to serve.

Serve cheesy potato rolls for breakfast or lunch with some sliced fruits and grilled meat for a balanced meal. I usually pack these crescent rolls for my 7-year-old son with a boiled egg and some sliced strawberries.

Oatmeal Peanut Butter Energy Balls

Oatmeal peanut butter energy balls is an easy and healthy snack with only 4 ingredients. These energy balls are great for road trips and stay good for a week.

Excellent Post Workout Snack:

Oats, peanut butter and honey together make a wonderful post-workout snack. It together provides an energy to our system. Kids would also love this energy balls, a great after school snack for them. My son loves to eat them for breakfast too. These energy balls are loaded with fiber, protein and good carbs that makes us feel filling and energetic for a longer time.

It is a perfect snack to eat on the go. We carry these energy balls for long road trips too. It stays good for a week at room temperature and in the refrigerator for a couple of weeks.

Smart Cooking Tips:

  1. You can add dry fruits and coconut flakes in this recipe.
  2. Adjust adding the peanut butter for binding the energy balls.

  3. You could replace the peanut butter with almond butter and honey with maple syrup.

  3. Shape them into small balls and serve or store in the refrigerator.

  • 2 tbsp Olive Oil
  • 1 tsp Salt (to taste)

  2. Marinate the chicken with coriander powder, red chili powder, turmeric powder, lemon juice, and garam masala.

  3. Use a sharp knife to cut into the side of each chicken breast and spoon the goat cheese mixture into each chicken breast evenly.

  4. Heat oil in the pan, place the chicken on the pan and cook on both the sides until done. Goat cheese and spinach stuffed chicken is ready to serve.

  • 2 lbs Chicken
  • 1.50 tbsp Whole Black Pepper (add according to your taste)
  • 0.50 tbsp Fennel Seeds
  • 0.50 tbsp Cumin Seeds
  • 4 no Cloves
  • 2 inch Cinnamon
  • 1 cup Curry Leaves
  • 4 tbsp Oil
  • 2 cups Onion Chopped
  • 1 tbsp Ginger Garlic Paste
  • 1 tbsp Coriander Powder
  • 1.50 tsp Salt (to taste)
  • 0.50 tsp Turmeric Powder
  1. Dry roast the whole black pepper, fennel seeds, cumin seeds, cloves, cinnamon, and curry leaves until the curry leaves turn crispy. Let it cool and blend to a fine powder.
  2. In a pan, heat oil, add chopped onion and cook until the onion becomes soft. 

  3. Add ginger garlic paste, turmeric powder and cook until the ginger garlic paste loses its raw smell.

  4. Add chicken, blended curry leaves powder, coriander powder, little amount of water, salt and mix well.

  5. Cover and cook until the chicken gets cooked. It might 20 minutes.

  6. Uncover the lid, mix well and cook until the chicken becomes dry. Curry leaves chicken is ready to serve.

Egg drop soup is a popular Chinese recipe that you could find in every Chinese restaurant.  It is my favorite soup recipe so I just wanted to try it at home. Actually, this soup is slightly thicker but I just wanted to make it light and healthy. So I skipped adding the corn flour to the soup. Egg drop soup is an excellent meal for the ones who follow the ketogenic diet. It is a simple soup recipe with only a few basic ingredients. It is a low calorie, filling, and protein-packed soup.

Smart Cooking Tips:

  1. You can add garlic and ginger powder instead of fresh ginger and garlic. You can add any of your favorite seasonings in this recipe.
  2. You can add veggies in this soup like the mushroom, corn, green beans, and carrot. For a filling meal, you can add shredded chicken and boiled noodles in it.

  3. You can add corn flour it helps to thicken the soup.

  4. Add eggs and stir vigorously in one direction for thin and silky egg ribbons.

  5. You can replace the chicken stock with vegetable stock.

  6. I used low sodium chicken stock in this recipe. The salty taste in the broth and soy sauce is just perfect for my taste bud so I didn’t add salt to the soup.

  • 0.25 tsp Black Pepper Powder or to taste
  1. Whisk the eggs until pale.
  2. In a saucepan, add chicken broth, soy sauce, ginger, garlic and bring to a boil. 

  3. Add the beaten eggs, stir vigorously in one direction and turn off the heat. Garnish with the chopped green onions, add pepper to taste and serve.

Tortilla pinwheels are the easy party appetizer recipe. You can choose fillings according to your choice. Simply seasoned cream cheese and bell pepper combo is enough to make the delicious pinwheels.

Choosing the good quality tortillas is important to make delicious pinwheels. Usually, store-bought tortillas are not my favorite. It won’t taste fresh and good just like the homemade tortillas. At friends home, they hosted a get together with around 35 to 40 people for Halloween and they asked me to prepare an appetizer. And that’s when I need to buy the store-bought tortillas.

  • 4 no Maria and Ricardo's Soft Corn Tortillas
  • 1 tbsp Cream Cheese
  • 1 no Avocado
  • 0.50 tsp Salt (to taste)
  • 0.25 cup Chopped Cilantro
  • 1 tsp Lemon Juice
  • 1 no Jalapeno Pepper Seeded
  • 2 tbsp Onion Chopped
  • 2 tbsp Tomato Chopped
  • 1 lb Chicken Boneless, Skinless
  • 1 tsp Salt (to taste)
  • 1 tbsp Soy Sauce
  • 1 no Onion Sliced
  • 1 no Green Bell Pepper Sliced
  • 1 tsp Coriander Powder
  • 1 tbsp Red Chili Sauce
  • 2 tbsp Oil
  1. For pan seared chicken: Slice the chicken breast thinly. In a pan, heat oil, add onion and cook until soft. Add bell pepper, chicken, soy sauce, coriander pepper, salt, and cook on high heat until the chicken is done. Add red chili sauce and mix well. Pan seared chicken is ready.
  2. For the creamy guacamole: Blend cream cheese, avocado, salt, lemon juice, jalapeno pepper, and coriander leaves together. Add chopped onion, tomato and mix well.

  3. Warm the tortillas for 30 sec on the skillet. Spread creamy guacamole, add chicken and roll. Cover the roll with plastic wrap or foil and refrigerate for at least 30 mins.

  4. Cut them into small pieces using a sharp knife and serve.

Spinach Corn Sandwich

Spinach corn sandwich is a delicious and easy sandwich recipe with spinach and corn stuffing. It is excellent for the kids lunch box.

Sandwiches are an easy and filling meal idea for everyone. It works great when it comes to breakfast or dinner. Peanut butter jelly sandwich is our favorite breakfast and Avocado boiled egg sandwich is great for dinner. I usually stock up my pantry with two loaves of bread. I pack sandwiches for my son Aldrich’s lunch box at least twice a week. Check out the easy sandwich recipes.

Smart Cooking Tips:

  1. You can add grated cheese in this sandwich if you love cheese.
  2. You can add any of your favorite seasonings like oregano, red pepper flakes or parsley.
  3. I used frozen sweet corn that I thawed in the refrigerator, you can use fresh corn too. Make sure to boil the corn until soft before using in the recipe.

Tips to pack sandwiches for lunch:

I have a frequently asked question from my blog readers. How to pack sandwiches in the lunch without getting soggy?

Here are the few tips that I follow to pack sandwiches for lunch:

    1. Choose thick slices of bread. I usually prefer oat nut bread or whole grain bread instead of white bread.
    2. Apply a good amount of butter on both the sides of the bread. Butter helps to avoid the bread from getting soggy.
    3. Toast or grill the sandwiches until crispy.
    4. Pack mayonnaise or other stuffings like cucumber, tomato separately.

  • 4 no Bread Slices
  • 0.50 cup Corn
  • 1 cup Spinach Chopped
  • 2 tsp All Purpose Flour
  • 0.50 cup Milk
  • 0.25 tsp Black Pepper Powder
  • 0.50 tsp Salt
  • 1 tbsp Butter + extra for applying on the bread slices
  • 1 tsp Garlic Chopped
  1. In a pan, melt butter, add garlic and saute until nice aroma comes out.
  2. Add corn and cook for 5 to 6 minutes. Add chopped spinach and cook until the spinach wilts.

  3. Add all purpose flour and mix well. Cook for 2 minutes. 

  4. Add milk, salt, pepper and mix well. Cook until it becomes thick, keep stirring to avoid forming lumps. Let it cool.

  5. Apply butter on the bread slices, place the filling in between the bread and grill or toast until crispy. Spinach corn sandwich is ready to serve.

Types Of Chocolate Chips Used For Baking

Have you come across miniature round drops in cookies, biscuits or sometimes even in cakes? Yes!!! They are the chocolate chips that melt quickly and spread in your mouth. There are a variety of chocolate chips and, each chocolate chip has a specific purpose. While baking chocolate chips, they hold their shape to give a classic round appearance.

Apart from the regular chocolate chips, you can also find stocks of a variety of chocolate chips like, mini chips, butter chips, butterscotch chips, cacao chips, white chocolate chips, peanut butter chips, dark chocolate chips, chocolate chips, and caramel chocolate chips. You can use these chips along with other baking products and get the drooling feeling in your mouth.

Milk Chocolate Chip

The sweetest chocolate chip that is available in the market is the milk chocolate which is also known as sweet chocolate. They are made from candy bars of similar chocolates and tastes good when it is eaten straight from the bag. The only difference between milk chocolates and other types of chocolates is that it has milk powder that adds a light cream color.  Many bakers don’t prefer to use milk chocolate chips as they tend to melt quickly as well as alters the texture of the baked food.

Semisweet Chocolate Chip

The common type of chocolate chip used in baking is the semisweet chocolate chip. It contains 75% cocoa whereas milk chocolate contains only 20%. Most of the recipes which have a rich chocolate flavor use semisweet chips. The chips contain only a little amount of sugar and, so it makes it easy for the bakers to control the sweetness of baked foods. These chips retain their shape while baking and so, they are ideal for cookies and biscuits.

Bittersweet Chocolate Chips

Bittersweet chocolate chips and Semisweet chocolate chips are quite similar. The bittersweet chocolate chip has a small amount of sugar of the overall 75% of cocoa.  The main difference between these two types of chips is that bittersweet chocolate chip contains a higher quantity of chocolate liquor – a liquid form cocoa beans, a little amount of vanilla and lecithin. Semisweet chips and bittersweet chips are interchangeable as it is hard to differentiate between the two.

Dark Chocolate Chips

Baking chips also known as dark chocolate chips have the higher level of cocoa from 75% to 100%.  Dark chocolate chips have a very little sugar or no sugar.  As the cocoa is in a higher level, the chocolates are usually dark and taste bitter. Many bakers prefer dark chocolate chips to give a natural chocolate flavor and, they sweeten the recipe by using other ingredients.

White chocolate chips

They don’t fall under the category of chocolate chips as there is no cocoa. But the chips contain vanilla, milk, and cocoa butter. Though the white chocolate chip is made from the cocoa bean, antioxidants that are present in dark chocolate is not available in white chocolate chips.  White chocolates are found in various forms like novelty chips, butterscotch chips, and peanut butter chips and so on.
