Peanut butter oatmeal cookies are the easy and delicious gluten-free cookie recipe. These cookies stay good for a couple of weeks in the room texture.   1. You can replace the honey with white or brown or coconut sugar. If you are using sugar instead of honey reduce adding the quantity of oats to half a cup.
  2. Avoid overbaking the cookies. Bake until the sides of the cookies turn brown. The cookies will be very tender when it is warm and firms after cooled down.

Flourless peanut butter oatmeal cookies are the easy, healthy and gluten-free cookies. It is simple to bake at home and stays good for a couple of weeks.

  • 1 cup Creamy Peanut Butter
  • 0.75 cup Oats
  • 0.50 cup Honey
  • 1 no Egg
  1. Line the baking tray with parchment paper and preheat the oven to 350 degrees.
  2. In a bowl, combine peanut butter, oats, honey, egg and mix well. 

  3. Drop the spoonful of peanut butter mixture on to the parchment paper with 2 – 3 inches space between each cookie.  

  4. Bake in a pre-heated oven for 10 – 12 minutes until the sides of cookies turn brown. The cookies will be very tender when it is warm. Let the cookies cool thoroughly and store it in an airtight container.

Cucumber Kootu

Cucumber kootu is an easy and healthy side dish that goes well with rice and chapati. It is simple to make in just a few mins.

Cucumber kootu is an easy, simple and healthy side dish with cucumber, moong dal, and coconut. Cucumber gives a nice taste to the kootu. This kootu tastes similar to the bottle gourd (lauki). Cucumber is a healthy and low-calorie green vegetable with loads of vitamins and minerals. Regular intake of cucumber helps in weight loss, lower in blood sugar, and helps in relieves constipation. This side dish goes well with the rice and chapati. Though you don’t like to eat raw cucumber like me will also love this cucumber kootu. Smart Cooking Tips:

  1. Avoid overcooking the cucumber it will become mushy and loses its nutrition.
  2. You can use toor dal in this recipe instead of moong dal.

  3. If you don’t have pressure cooker, you can cook in the saucepan. Add water in the saucepan, bring it to a boil, add moong dal, cover and cook until the moong dal becomes soft.

Cucumber Kootu

Cucumber kootu is an easy and healthy side dish that goes well with rice and chapati. It is simple to make in just a few mins.

  • 1 no Cucumber Large
  • 1/3 cup Moong Dal
  • 0.25 cup Shredded Coconut
  • 2 no Dry Red Chilies
  • 0.50 tsp Cumin Seeds
  • 1 cup Onion Chopped
  • 0.50 tsp Turmeric Powder
  • 2 tbsp Oil
  • 10 no Curry leaves
  1. Rinse the moong dal 3 – 4 times. In a pressure cooker, add moong dal, water, turmeric powder, salt and cook until 4 whistles. Let the pressure cooker cool naturally and mash the dal.
  2. Wash, peel, and chop the cucumber into small cubes.  

  3. In a pan, heat oil, add mustard seeds and let it splutter. Add urad dal, asafoetida, curry leaves, chopped onion and cook until the onion becomes soft.

  4. Add the chopped cucumber, little amount of water and salt. Cover and cook until the cucumber becomes soft. 

  5. Add mashed moong dal and mix well. 

  6. In a blender, grind the coconut, red chilies and cumin seeds together until smooth by adding little amount of water and add it to the kootu.

  7. Cover and cook the kootu for 5 minutes and garnish with the chopped coriander leaves and serve.
