Thalassery Chicken Biriyani

Ingredients: 1.Chicken 1lb 2.Whole Garam Masala(Cinnamon stick,Cardamom,Cloves,Bayleaf) 3.Ginger Garlic Paste 2tbsp 4.Garam masala 2tbsp 5.Coconut Paste 1/2cup 6.Basmati Rice 2cup 7.Water 1cup 8.Yogurt(Curd) 1/2cup 9.Coriander Powder 1tbsp 10.Mint leaves chopped 1cup 11.Cilantro(coriander leaves) 1cup 12.Onion 1medium size 13.Tomato chopped 1cup 14.Green chillies 4 15.Red Chilly powder 1tsp 16.Turmeric Powder 1tsp 17.Salt (to taste) 18.Fennel Seeds 1tsp 19.Curry leaves 1spring 20.Fried Onion 1/2 Preparation: 1.Wash and soak the rice for 1/2 an hour. 2.Wash and marinate the chicken pieces with yogurt,coriander powder,1tbsp of garam masala,turmeric powder,salt,little red chilly powder,1tbsp of ginger garlic paste for 1/2 an hour. 3.In a hot ghee add fennel seeds,whole garam masala,green chillies,ginger garlic paste,chopped mint leaves,chopped coriander leaves, stir and cook till the ginger garlic paste loses its raw smell. 4.Drain away the water from the soaked rice and add it into the pan,give it to a good mix. 5.Add 2 cups of water and right amount of salt,cover and cook till all the water evaporates. 6.In a hot oil,fry the chicken pieces till it done. 7.In a pan add oil,add sliced onion,chopped tomato,1tbsp of garam masala,salt,little red chilly powder,salt and cook till the tomato's are soft,add coconut paste,fried chicken and give it to a good mix. 8.Spread the cooked rice,fried onion,on top of the masala,cover and cook for 3-5 minutes,Give it to a good mix. 9.Thalassery Chicken Biriyani is ready to be served.

Peanut Sundal

PEANUT SUNDAL:
Ingredients:
1.Peanuts 2 cup
2.onion 1
3.curry leaves 1 spring
4.Hing 1/2 tsp
5.mustard seeds 1/2 tsp
6.urad dal 1/2 tsp
7.Red chillies 2
8.oil
9.salt(to taste)

Preparation:
1.Soak the peanuts for 6-7 hours.
2.Drain the water,In a deep vessel add water and salt, boil the peanuts till it becomes soft(not mashy).
3.In a separate pan,heat oil and add mustard seeds,wait till the mustard seeds get crackle,add urad dal,hing,red chillies, curry leaves and chopped onion and till the onion becomes golden brown.
4.Add the boiled peanuts and give it to a good mix.Peanut Sundal is ready to be served.
Note:
While boiling the peanuts do not add more or less salt in the water.The right amount of the salt should be added.You can add the shredded coconut too.

Cauliflower Fry

Cauliflower Fry:
Ingredients:
1.Cauliflower florets
2.Rice flour
3.corn flour
4.Ginger garlic paste
5.Red chilly powder
6.Corriander powder
7.Cumin powder
8.Garam masala
9.salt
10.Thick yogurt
11.Hing
Preparation:
1.Boil water in a deep pan,add the cauliflower florets in the boiling water,add salt and hing powder.
2.Take the florets out from boiling water after 4-5 min(cauliflower used to cook faster).
3.In a deep bowl,add thick yogurt,ginger garlic paste,red chilly powder,corriander powder,cumin powder,garam masala,rice flour and corn flour.
4.Give it to a good mix and set aside for 20 min.
5.Heat oil in a pan,fry it in a medium flame.
6.Using the paper towel,drain away the excess oil.
7.Cauliflower fry is ready to be served.

Banana Rava Idly

Ingredients:
1.Rava/sooji 1 cup
2.Big Banana-1
3.Sugar to taste.
4.Ghee(to grease the moulds)
5.Baking soda

Preparation:
1.In a Large bowl, add Sooji/rava,Mashed banana(Mash the banana using fork),Baking soda and sugar to taste,Give it to a good mix.
2.Add water and make it into a batter(The batter should not be too thick nor watery).
3.Grease the Idly Moulds using ghee and pour the batter into the moulds.
4.Cook it in a Idly cooker for 15 min.
5.Banana Rava Idly is ready to be served.
