This Lauki pulao is an easy and flavorful one pot meal from kids to everyone loves this pulao. You can even grate the bottle gourd instead of chopping. Grated bottle gourd mix with the rice thoroughly and your kids don’t even notice the bottle gourd in the pulao.

1. You can grate the bottle gourd finely and add to the pulao. This way you can easily include bottle gourd in the picky eater’s diet.

Bottle Gourd Rice (Lauki Pulao)

Bottle gourd rice (Lauki Pulao) is an easy and flavorful one pot meal. An excellent way to include bottle gourd in the diet.

  • 1 no Bottle Gourd (Lauki) Medium Size
  • 1 cup Onion Chopped
  • 2 no Tomatoes
  • 2 tbsp Oil
  • 1 tsp Cumin Seeds
  • 1 tbsp Ginger Garlic Paste
  • 0.25 tsp Turmeric Powder
  • 0.50 tbsp Red Chili Powder
  • 1 tbsp Coriander Powder
  • 1 tsp Garam Masala
  • 0.25 cup Mint Leaves
  • 0.50 cup Coriander Leaves Chopped
  • 2 cups Basmati Rice
  • 4 cups Water
  • 2 tsp Salt (to taste)
  1. Rinse and soak the rice in water for 20 minutes. Peel the skin of a bottle gourd, chop into small pieces and discard the seeds.

  2. In a saucepan, heat oil, add chopped onion and cook until the onion becomes soft. 

  3. Add turmeric powder, ginger garlic paste and saute until the ginger garlic paste loses its raw smell.

  4. Add chopped tomatoes and cook until the tomatoes become soft and mushy. Add red chili powder, coriander powder, salt, garam masala and mix well. Sprinkle little amount of water and cook until the spices lose its raw smell.

  5. Add chopped lauki, mint leaves, chopped coriander leaves and mix well. 

  6. Add the soaked rice and mix well. Add water and bring to a boil. Check for the right amount of salt at this time and add accordingly.

  7. When the water starts boiling, cover the pan with a lid and cook until the water gets absorbed by the rice completely. Garnish with the chopped coriander leaves, mix gently with a spatula and serve.

Okra is a healthy and low-calorie green vegetable, an excellent source of dietary fiber, vitamins and folic acid. The dietary fiber content in the okra helps to manage the blood sugar level. Okra is widely used in Indian cooking. It is also known by different names in India, Vendakkai, Bhindi and lady’s finger. Okra buttermilk curry, okra tamarind curry, Besan Walli bhindi, are the popular Indian recipes using okra. Recently, I tried spicy oven roasted okra, it turned out awesome just like the fried ones.

Smart Cooking Tips:

1. Cooking the okras separately in the oil is an important step. It helps the okra to retain the shape without getting mushy and breaks up into tiny pieces.

2. Add red chili powder according to your spice level.

Bhindi masala curry is a creamy and thick curry with yogurt (curd), spices, tomato and onion that serves with white rice, roti, and chapati. Bhindi cooked in a tomato, onion and yogurt gravy. Yogurt gives a nice sour taste and creamy texture to the curry.

Bhindi Masala Fry

Bindi masala fry is a healthy and flavorful side dish that goes well with chapati or roti. Okra cooked in a spicy tomato onion masala.

  • 15 no Bhindi (Okra)
  • 2 no Tomatoes
  • 1 cup Onion (Chopped)
  • 1 tsp GingerGarlic Paste
  • 3 tbsp Oil
  • 1 tsp Red Chili Powder
  • 1 tsp Salt (to taste)
  • 1 tbsp Coriander Powder
  • 1 tsp Garam Masala
  • 1 pinch Turmeric Powder
  1. Rinse the okra thoroughly in the water and pat them dry using a clean kitchen cloth. Cut and discard the top and a bottom portion of the okras and chop them into 2-inch pieces.

  2. Heat a tbsp of oil in a saucepan and add the chopped okra and saute until the okra gets cooked. The cooked okra should be soft but still slightly crunchy. Remove the cooked okra from oil using a spatula and keep aside until needed.

  3. In the same pan, heat the remaining 2 tbsp of oil, add chopped onion and cook until the onion becomes soft.

  4. Add turmeric powder, ginger garlic paste and saute until the ginger garlic paste loses its raw smell.

  5. Add chopped tomatoes and cook until the tomatoes become soft and mushy.

  6. Add coriander powder, red chili powder, salt, garam masala and cook until the spices lose its raw smell. Sprinkle little amount of water and keep stirring the masala to avoid getting burned.

  7. Add cooked bhindi and mix gently. Cook for another 2–3 minutes over a medium heat, keep stirring in between. Bhindi masala fry is ready to be served.

  • 1 tsp Coriander Powder
  • 2 tbsp Peanuts (skinless)

How to cook egg masala curry?

Egg masala curry is a simple and spicy dish with boiled eggs, tomato, and spices. It is similar to the egg curry recipes but the consistency of egg masala is thicker compared to the curry. It is an excellent side dish for the rice, dosa, and roti. Also, it is simple to make in just a few minutes. You can either use a boiled eggs or break open the eggs directly on the gravy and cook.

1. Boil eggs separately and slice them into a half.
2. In a saucepan, heat oil, add fennel seeds, chopped onion, green chilies, curry leaves and cook until the onion becomes soft.
3. Add turmeric powder, ginger garlic paste and cook until the ginger garlic paste loses its raw smell.
4. Add chopped tomato and cook until the tomato becomes soft.
5. Add salt, red chili powder, coriander powder, garam masala and mix well. Sprinkle little amount of water and cook until the spices lose its raw smell.
6. Add boiled eggs, cover and cook for 5 – 10 minutes over a medium heat. Garnish with chopped coriander leaves.

Smart Cooking Tips:

1. Cook the tomatoes thoroughly until mushy. If the tomatoes remain uncooked the gravy tastes raw tomato flavor.

2. Keep stirring the gravy often that helps to avoid the gravy getting burned.

Egg Masala Gravy

Egg masala gravy is an easy and spicy side dish that goes well with rice, dosa, and roti. Boiled eggs cooked in a spicy tomato gravy.

  • 4 no Eggs
  • 4 tbsp Oil
  • 1 tsp Fennel Seeds
  • 1 cup Onion Chopped Finely
  • 4 no Roma Tomatoes
  • 1 tbsp Ginger Garlic Paste
  • 0.50 tsp Turmeric Powder
  • 1 tbsp Coriander Powder
  • 1 tsp Garam Masala
  • 2 tsp Salt (to taste)
  • 1 tbsp coriander leaves chopped for garnishing
  1. In a sauce pan, add water just enough to cover the eggs and place eggs gently. Add a pinch of salt and bring the water to a vigorous boil. Turn off the heat and cover the pan with a tight lid and let the eggs sit in a hot water for 12 – 15 minutes. Rinse the boiled eggs in a cold water, crack open the eggs and slice each egg in a half.

  2. For masala, in a pan, heat oil, add fennel seeds, chopped onion and cook until the onion becomes soft.

  3. Add turmeric powder, ginger garlic paste and cook until the ginger garlic paste loses its raw smell.

  4. Add chopped tomatoes and cook until the tomatoes become soft and mushy.

  5. Add coriander powder, salt, red chili powder, garam masala, salt and mix well. Sprinkle little amount of water and cook until the spices lose its raw smell. Keep stirring in between to avoid the masala getting burned.

  6. Add boiled eggs, cover and cook for 10 minutes over a low to medium flame. Garnish with chopped coriander and serve.

EASY AND HEALTHY SPINACH PARATHA

Spinach paratha is an easy and healthy dinner recipe with spinach and wheat flour. It is an excellent way to include spinach in the diet.

Healthy Dinner Recipe:

Paratha is a traditional Indian recipe that is a part of an everyday meal in many Indian households. Adding spinach, cumin seeds, ginger and green chilies to the paratha adds a flavor and nutritious to the regular paratha. Spinach paratha is an excellent way to include spinach in the kids diet.

Smart Cooking Tips:

1. For a beautiful green color paratha, you can blanch the spinach in a hot boiling water for a couple of minutes and grind with the cumin seeds, green chilies to a smooth puree, add to the wheat flour and knead the dough.

2. Adding green chilies and cumin seeds are optional.

Easy and Healthy Spinach Paratha

Spinach paratha is an easy and healthy dinner recipe with spinach and wheat flour. It is an excellent way to include spinach in the diet.

  • 1 cup SPINACH LEAVES (BLANCHED)
  • 2 cup WHEAT FLOUR (ATTA)
  • 0.50 tsp CUMIN SEED
  • 1 no GREEN CHILIES FINELY CHOPPED (OPTIONAL)
  • 0.50 cup WATER (FOR KNEADING DOUGH)
  • 1 tsp SALT
  1. Blanch spinach in hot water for a couple of minutes until the leaf gets shrunk and chop them finely. Chop the green chilies finely.

  2. In a bowl, combine wheat flour, salt and mix well. Add chopped spinach, green chilies, cumin seeds and mix well.

  3. Add water slowly and knead a soft dough. Divide the dough into small portions, dust it with the flour and roll on the flat surface using a rolling pin into a thin circle shaped parathas.

  4. In a hot skillet, place rolled paratha one at a time and cook on both the sides, until the brown spots appear. Spinach paratha is ready to be served.

Green Chutney for Hara Bhara Kabab:

Green chutney is an easy, spicy and flavorful side that serves with chat and snack recipes. Bombay sandwich, aloo tikka, chicken tikka and fish tikka are the dishes that serves with green chutney. Green chutney is made with fresh coriander leaves, mint leaves, ginger, green chilies and lemon juice.

1. Grind the coriander leaves, mint leaves, and green chilies together to a smooth paste. Add lemon juice, salt and mix well.

Smart Cooking Tips:

1. Squeeze out the excess water from the blanched spinach before mixing with the mashed potatoes. Otherwise, the kababs would become soggy.

2. You can add boiled carrots, grated paneer in this kabab recipe.

3. Roast the besan (chickpea flour) thoroughly until the nice nutty aroma comes out and the color changes slightly to a golden brown.

4. You can add chopped peanuts in this kabab that gives a nice crunchy taste to the kabab.

Paneer Hara Bhara Kabab:

Paneer is an Indian cottage cheese that is rich in protein and calcium. It is widely used in Indian cuisine from appetizers to desserts. Adding grated paneer to the hara bhara kabab gives an excellent taste to the kabab with bonus protein to the kabab. You can serve this paneer hara bhara kabab as a snack or with burger buns as a burger for lunch or dinner.

Kids-Friendly Snack:

Hara Bhara kabab is a healthy after school snack for kids. Potatoes, peas, and spinach together provide needed carbs and vitamins for the kids. You can make the patties in a bulk and store in a freezer for a month. Whenever needed just pull out the patties from the freezer and thaw in the refrigerator overnight or in the microwave oven and cook the patties before serving. You can even bake the kababs in a preheated 400 degrees oven for 17 to 20 minutes. Turn the kababs after 10 minutes to the other side and bake for another 10 minutes until the color changes to golden brown. I recently baked similar kind of vegetable kabab with mixed vegetables that are also a big hit with my little son Aldrich.

Hara bhara kabab is an easy and healthy snack with spinach, peas, and potato. It is an excellent way to include veggies in the kids diet.

  • 2 no Potatoes Medium Size
  • 2 cups Spinach tightly packed
  • 1 cup Green Peas
  • 3 tbsp Besan Flour (Chickpea Flour)
  • 1 tsp Garam Masala
  • 2 tsp Salt (for taste)
  • 1 tsp Lemon Juice
  • 1 tsp Chat Masala
  • 1 tbsp Oil
  1. Boil potatoes and green peas until tender and mash them together without leaving any big chunks.

  2. Blanch spinach leaves in a boiling water for a couple of minutes until the leaves get shrunk. Immediately remove the spinach leaves from hot water and squeeze out excess water from the spinach leaves.

  3. Roast the besan flour over a medium flame until the nice nutty aroma comes out and the color starts changing slightly.

  4. Combine mashed potatoes and peas mixture, blanched spinach leaves, roasted besan flour, salt, garam masala, chat masala, lemon juice and mix well. 

  5. Divide them into small portions and make small round shaped patties. In a skillet, heat a tbsp of oil and cook patties on both the sides until the color changes to golden brown. Hara bhara kabab is ready to serve.

Serve hara bhara kabab as a snack or in between the burger buns as a burger for lunch or dinner.

Smart Cooking Tips:

1. I used store-bought skinned and roasted peanuts. If you are using raw peanuts, roast and remove the skin before grinding. You can roast in the microwave oven or in a skillet on the stove top over a medium flame.

2. You can use raw tamarind instead of tamarind paste. Saute the raw tamarind with the onion and red chilies.

  • 1 cup Onion Chopped
  • 0.50 cup Roasted and Skinned Peanuts
  • 4 no Dry Red Chilies
  • 1 tbsp Oil + 1 tsp oil for tampering
  • 0.50 tsp Tamarind Paste
  • 1.50 tsp Salt (to taste)
  • 2 no Garlic cloves Medium Size
  • 0.50 tsp Mustard Seeds
  • 0.50 tsp Urad Dal
  • 1 pinch Asafoetida
  • 5 no Curry Leaves
  1. In a small saucepan, heat oil, add chopped onion, red chilies, garlic and saute until the onion color changes to golden brown and allow to cool.

  2. In a blender, add sauteed onion mixture, tamarind paste, roasted peanuts, salt, little amount of water and grind to a smooth texture. Transfer to a serving bowl.

  3. For tampering: In the same saucepan, heat a tsp of oil, add mustard seeds and when they start to splutter, add urad dal and saute until the color changes to golden brown. Add asafoetida and mix well in the oil. Add curry leaves and give a quick mix. 

  4. Add it to the chutney, mix well and serve.

1. Roast each ingredient separately over a low to medium flame. This helps to avoid the lentils from getting burned. Avoid roasting the lentils too much until the color changes to dark brown.

  • 0.50 cup URAD DAL
  • 0.50 cup CHANNA DAL
  • 8 no DRIED RED CHILIES
  • 3 tbsp SESAME SEEDS
  • 0.50 tsp HING OR ASAFOETIDA
  • 1 tsp OIL
  • 1 tsp SALT TABLE
  1. Dry roast the urad dal over a medium flame until the color changes to golden brown. Transfer the urad dal to a wide pan and allow to cool.

  2. In the same pan add channa dal and roast until the color changes to golden brown. Transfer to the wide plate and allow to cool. Add red chilies and roast until the color changes slightly. 

  3. In a blender add roasted urad dal, chana dal, asafoetida, salt, red chilies, sesame seeds and grind to a coarse powder. Store idli powder in a clean and dry air-tight container.

Serve Idli podi with idli, dosa and paniyaram.

Baked sweet plantain chips is an easy and healthy snack, taste sweet and crunchy. It is simple to bake at home in just a few. Choose firm sweet plantains, the skin should be yellow with few black spots is fine. Avoid using the overripe sweet plantains. Slice the sweet plantains thinly using a knife or mandolin. If you slice the plantains thicker then the chips won’t taste crispier. Mix oil and salt gently and arrange on the parchment layered cookie sheet in a single layer. Bake in a 350 degrees oven for 30 – 35 minutes until crunchy and color start to brown around the edges. Allow to cool and serve.

  1. Pre-heat the oven to 350 degrees and line the baking sheet with parchment paper.

  2. Cut the edges, peel, and slice the plantain thinly. In a bowl, combine sliced plantains, salt, oil and mix well. 

  3. Arrange the sliced plantains in a single layer and bake in a pre-heated 350 degrees oven for 25 to 30 minutes until they start to brown the edges and turns crispy. Turn plantains to the other side after 10 minutes. 

  4. Allow the plantains to cool and serve.

How To Make Ghee Rice At Home

Kids would love this rice, because of its mild spice flavor and ghee. Crispy fried cashew nuts, onions, and raisins give more taste to this dish. I used basmati rice for this dish, Soaking time and the amount of water for cooking depends on the quality of your rice.

 

Veg Kurma for Ghee Rice:

Veg kurma is a spicy side dish that goes well with ghee rice. It is made with mixed vegetables like potato, peas, carrot, beans and cauliflower that is flavored with spices and coconut.  If you would like to learn how to make veg kurma, check out the recipe for veg kurma.

Spice flavored ghee rice is a simple and easy dinner recipe. This rice dish goes well with chicken or vegetable stew. 

  • 5 tbsp GHEE
  • 2 cup BASMATI RICE
  • 4 cup WATER
  • 1 cup ONIONS SLICED
  • 2 no GREEN CHILIES
  • 1 no CINNAMON
  • 4 no CLOVES
  • 4 no CARDAMOM
  • 2 no BAY LEAF
  • 2 tsp CUMIN SEED
  • 10 gms CASHEW NUTS CHOPPED
  • 10 gms RAISINS
  • 0.50 cup FRIED ONION
  1. Soak the rice in water for an hour. In a large pan, heat ghee, add the cashew nuts, raisins and roast until the cashew nut color changes to golden brown and raisins become plump. Remove cashew nuts and raisins using slotted spoon and keep aside until needed.

  2. Add the cinnamon stick, cloves, cardamom, bay leaves and saute until nice aroma comes out.

  3. Add the cumin seeds, sliced onion, green chilies and cook until onion becomes soft.

  4. Add the soaked rice and saute for a minute. Add water, salt and mix well. Bring it to boil, cover and cook until the water gets absorbed by rice completely. Garnish with roasted cashew nuts, raisins, fried onions and mix well.

HOW TO SERVE GHEE RICE?

Serve ghee rice with chicken stew or vegetable stew or simply with yogurt raita.

EGGPLANT DISH – ENNAI KATHIRIKAI KULAMBU IN 30 MINS

Ennai Kathirikai Kulambu with rice is an easy lunch idea in 30 minutes. It is a quick and flavorful eggplant dish made with spices, tamarind, and coconut.

 

An Easy Lunch Ideas with eggplant:

Eggplant is known as brinjal in India. It is a popular vegetable that people use in many dishes like Baingan Bharta, Vangi Bhath and Spicy stuffed eggplant curry. Ennai Kathirikai kulambu is a spicy and flavorful curry using eggplant, it is a popular curry in South India. This is my favorite curry recipe because I love tangy and spicy taste together. Eggplants takeless time to cook, so you can make it in few minutes. Eggplant curry with spicy potato fry is my favorite combo. You can also serve this curry with boiled eggs also. So this curry is the easiest option to make for the lunch.

Smart Cooking Tips:

1. Wash and make four slits on bottom of the eggplants as I shown in the picture and check thoroughly for worms because eggplants sometimes contain worms.

2. Shake off the excess water from washed eggplants and pat dry using a kitchen towel before adding it to the oil. Because if it has water then the oil starts to pop and splutter out of a pan.

3. Cook eggplants in a low to medium flame to avoid burning it.

4. Adjust adding tamarind according to your taste because I love the tangy taste, so I added one tsp of tamarind concentrate. You can also add raw tamarind, soak 30 gms of tamarind in 1 to 1.50 cup of water and extract juice and use it in the curry.

5. This curry should be little thick so avoid adding more quantity of water.

6. You can also replace the coconut with coconut milk.

A Quick Meals for Dinner:

Eggplant curry with rice is a quick meal that you can make in 30 minutes. Whenever I make this curry I simply serve it egg pepper fry for my family for a complete meal. Eggplant curry, rice and egg pepper fry together take an hour to cook and also it is a healthy and delicious menu for dinner, even papad goes well with curry.

  • 4 no EGGPLANT
  • 2 no ROMA TOMATO
  • 1 no ONION CHOPPED
  • 3 tbsp OIL
  • 0.25 tsp MUSTARD SEEDS
  • 0.50 tsp URAD DAL
  • 0.50 tsp FENUGREEK SEED
  • 10 no CURRY LEAVES
  • 8 gms GARLIC
  • 1 tsp GINGER GRATED
  • 1 tsp TAMARIND
  • 1.50 cup WATER
  • 1 tbsp CORIANDER POWDER
  • 1 tbsp RED CHILI POWDER
  • 1.50 tsp SALT (to taste)
  • 0.50 tsp TURMERIC POWDER
  • 0.25 cup COCONUT SHREDDED
  • 1 tsp CUMIN SEED
  1. Wash the eggplants and make four slits on bottom of the eggplants as I shown in the picture.

  2. In a pan heat a tbsp of oil, add eggplants and roast in a medium flame until it becomes soft and the color changes slightly. Remove eggplants from the oil and keep it aside until needed. Be careful when placing eggplants in the oil because the moisture content in the eggplants makes oil to pop and splutter out of the pan.

  3. In the same pan, heat two tbsp of oil, add mustard seeds and allow it to splutter. Add urad dal, fenugreek seeds and saute until the color changes into golden brown.

  4. Add chopped garlic, grated ginger and saute until the nice aroma comes out.

  5. Add curry leaves, chopped onion and cook until the onion becomes soft. Add chopped tomatoes and cook until it becomes soft and mushy.

  6. Add coriander powder, red chili powder, turmeric powder, salt and mix well. Cook until the spices lose its raw smell.

  7. Add 1.50 cups of water, tamarind concentrate and mix well. Allow it to boil for five minutes. If you are using raw tamarind, soak in a hot water for ten minutes and extract juice from it and add to the curry.

  8. Add roasted eggplants, cover and cook for five minutes. Grind shredded coconut with cumin seeds to a smooth paste and add it to the curry. Reduce the flame and boil for another 5 minutes and garnish with chopped coriander leaves.

 

How to serve Ennai Kathirikai Kulambu?

Serve Ennai Kathirikai Kulambu with rice, idli or dosa. I love to have it with roti or chapati also.

You need to take care of feeding and entertaining them all the way.

Children get bored easily, and the best way to keep them entertained is snacking.
Although my son Aldrich enjoys a car ride but he still needs something to munch every couple of hours.
Long drive not only makes kids bored it also makes them tired. So the body naturally asks for food and fluids.

When we plan our trips one thing we tend to overlook is the snacks. The reason is we think we can get the packaged snacks from any stores or gas stations.

If you think about it, you never would do that on a regular day when you are staying at home.
Because you know they are not healthy and could be dangerous for growing kids.

Keeping this in mind I thought of putting together a collection of snacks recipes that can be used for road trips.

Doodh Peda Using Milk Powder

Doodh peda is an easy and delicious Indian sweet with milk powder and condensed milk. It is simple to make in just a few minutes.

Doodh Peda Microwave:

You can make doodh peda in a microwave oven too. It is an easy and quick method of making doodh peda.

1. In a microwave safe bowl, combine condensed milk, milk powder, saffron, crushed cardamoms, ghee and mix well without any lumps.

2. Cook until the condensed milk mixture becomes thick. Take out the bowl at every 2 minutes interval and give a stir.

3. Allow the mixture to cool and when it is warm enough to handle by your hand shape them into small balls, make a slight dent in the center and garnish with chopped nuts. Allow the pedas to cool completely and serve.

Smart Cooking Tips:

1. Cook condensed milk and milk powder over a low to medium to avoid getting burned.

2. Allow the pedas to cool completely and serve. This instant pedas will taste chewy immediately after cooking. So it is good to serve after 5 hours.

3. If you store pedas in the refrigerator the pedas will become hard. So bring the pedas to the room temperature before serving.

Easy Dessert for Parties:

Doodh peda is an excellent dessert for parties, special occasions, and potlucks. You can make easily in large quantities in less time with store bought condensed milk and milk powder.   • 14 oz Condensed Milk
  • 1 cup Milk Powder
  • 1 pinch Saffron
  • 2 no Green Cardamoms
  • 0.50 tbsp Ghee
  • 2 tbsp Chopped nuts of your choice
  1. 1. In a pan, add condensed milk, milk powder, freshly crushed cardamoms, saffron and mix well without any lumps.

  2. 2. Turn on the heat and cook over a low to medium heat until the condensed milk mixture becomes thick. Keep stirring and scraping the bottom and sides of a pan to avoid the condensed milk and milk powder sticking to the pan and getting burned.

  3. 3. Finally, add ghee, mix well and remove the pan from heat. Allow the condensed milk mixture to cool, when it is warm enough to handle with your hand, shape them into small balls and make a slight dent in the center and garnish with chopped nuts.

Being a South Indian white rice is part of my everyday diet, eating white rice every day resulted in me gaining a lot of weight.

AVOCADO MANGO SHRIMP SALAD IN 10 MINUTES

Shrimp Avocado and Mango Salad are a delicious seafood meal idea. It is fresh, healthy and colorful salad with a hint of lime and pepper making it more attractive.

A healthy, tasty, and fresh salad:

Avocado, Mango shrimp salad is a healthy salad without any fatty toppings. This all-natural salad includes only fresh ingredients like Avocado, Mango, Shrimp, lemon juice and Cilantro. Making an excellent pairing and delicious treat to your taste buds.

Smart Tips:

1. If you are using raw shrimp, make sure to cook thoroughly and cool it completely before adding it to the salad. I used Indian spices to cook shrimp which helps to enhance the flavor and subside the fishy smell.

2. Make sure to use firm mango in this salad, overripe mango tastes much sweeter and becomes mushy.

3. You can also chill it in the refrigerator for an hour before serving.

4. Also cut the avocado and mango into smaller pieces, so it mixes well and tastes better while eating.

Avocado and mango together tastes buttery, sweet, tangy and creamy. It is an excellent salad recipe for the children because it is loaded fresh ingredients without any unhealthy artificial toppings.
My son does not prefer to eat shrimp without spices, so I added little spices for making it more flavorful.

  • 1 no ALPHONSO MANGO
  • 250 gms SHRIMP
  • 1 tsp OIL
  • 0.50 tsp SALT
  • 0.25 tsp PEPPER POWDER
  • 1 tsp LEMON JUICE
  • 0.25 tsp RED CHILI POWDER
  1. In a pan heat, a tsp of oil add shrimp, salt, red chili powder and cook until shrimp gets cooked completely. Allow it to cool.

  2. In a medium bowl add diced avocado, diced mango, cooked shrimp, lemon juice, chopped cilantro, salt, pepper powder and mix gently (Add salt and pepper according to your taste). Serve immediately or chill it in the refrigerator and serve.

Coconut shrimp soup is a famous soup recipe in Thai cuisine. Coconut milk gives a rich and creamy texture to the soup. Coconut milk is one of my favorite ingredient in my kitchen that gives an excellent flavor to the curries and rice varieties. Because of it’s creamy and mildly sweet taste kids would also like the dishes made with coconut milk. Coconut shrimp soup is my little son’s Aldrich favorite. Smart Cooking Tips:

1. Avoid boiling the coconut milk for a long time because the soup will become too thick quickly. Use thick coconut milk for a creamy soup.

2. Make sure to cook the shrimp thoroughly before adding coconut milk.

3. If you are using frozen shrimp make sure to that it properly according to the package direction before adding it to the soup.

4. You can add chopped green chilies with onion and bell peppers for a spicy soup.

A quick soup in under 30 minutes:

Shrimp soup with coconut milk is a quick and flavorful soup recipe that takes only 25 minutes to make. Shrimp takes only a few minutes to cook so this soup will do in less time. I serve this shrimp soup with a freshly baked garlic breadsticks for a filling meal. Kids would also love this creamy and flavorful soup. My son Aldrich loves to have it with hot steamed white rice. This shrimp soup is a delightful dish for all the seafood lovers.

Serve shrimp soup warm. You can also serve this soup with hot steamed white rice or with garlic bread for a filling meal.

  • 13.5 oz COCONUT MILK
  • 0.50 cup ONION CHOPPED
  • 0.50 cup CAPSICUM CHOPPED
  • 2 no ROMA TOMATO CHOPPED
  • 2 tbsp OIL
  • 1 tsp SALT
  • 1.50 tsp RED CHILI POWDER
  • 2 tbsp CILANTRO (CORIANDER)LEAVES RAW
  • 1 tsp GARLIC CHOPPED
  1. In a pan heat oil, add chopped garlic and cook until the color changes slightly orange.

  2. Add chopped onion, bell pepper and cook until onion becomes soft.

  3. Add chopped tomatoes and cook until the tomatoes become partially soft.

  4. Add shrimp, coriander powder, red chili powder, chopped cilantro and cook until the shrimp gets cooked thoroughly.

  5. Add coconut milk and bring it to a boil. Turn off the heat and transfer it to a soup bowl immediately. Serve warm.

Chicken breast is an excellent source of protein, low in carbohydrates and fat and black beans is a good source of protein and fiber. After a long, tiresome working day, I usually ended up in eating fast foods which are high in sodium and fat, usually ended up in a guilt of serving junk food for my family. After started making chicken chili at home, I found it is a quick and healthy dinner recipe to make at home with less effort and also tastes delicious. Even my kid Aldrich loved it and I felt happy that he loved this healthy one pot meal without asking for any junk food as a bribe for finishing his dinner.

Smart Cooking Tips:

1. I rinse the canned black beans in cold water before adding it to the chili, because to get rid of sodium. If you don’t rinse it avoid adding salt or less amount of salt because the liquid content in canned beans is salty.

2. Make sure to chop the chicken breast finely. You can also use ground chicken or turkey in this recipe.

3. Cook until tomatoes become soft and blend with the chicken and black beans. So that the chili tastes more flavorful and thick in consistency.

4. Using cheese for garnish is purely your option, my husband loves cheese taste in chili, and I don’t prefer it.

5. You can use any variety of bell peppers in this recipe like red, yellow, green or orange peppers.

  • 0.50 tbsp RED CHILI POWDER
  • 1 no GREEN CAPSICUM
  • 1 tsp CUMIN SEED
  • 0.50 cup WATER
  • 1 tsp GARLIC CHOPPED
  • 1 cup ONION CHOPPED
  1. Chop the boneless skinless chicken breast finely and trim off the fat. Rinse the canned black beans in a cold water using a colander.

  2. In a pan heat oil, add finely chopped garlic, onion and cook until onion becomes soft.

  3. Add chopped chicken and cook until the color changes to white on the outer side of chicken pieces. 

  4. Add black beans, chopped tomatoes, bell peppers, coriander powder, red chili powder, cumin powder, salt, water and mix well.

  5. Cover and cook until the chicken get cooked completely and tomatoes become soft. 

  6. Uncover the lid and allow it to boil on a medium flame until the chili turns into a desired thick consistency. Garnish it with shredded cheese and serve.

SPICY PAN SEARED SALMON

Pan seared salmon is a quick and simple salmon recipe. I grew up eating spicy roasted fish, which is similar to this recipe. I just make use of the same recipe, on the salmon fillet and cooked on the stovetop using a skillet.

In India most of the fish recipes, include the spices which are used to eliminate the stinky fish smell and also to give a nice flavor. Same spices I used with salmon and surprisingly turned out more delicious. Whenever I feel tired to cook, I choose to make this simple and healthy pan seared salmon, rather than loading with unhealthy stuff. I simply serve it with steamed broccoli or other veggies and bread toast for my family for a complete meal. I added spices, salt, and lemon juice according to my taste, adjust adding it according to your taste. 

SPICY PAN SEARED SALMON

  • 8 oz SALMON
  • 1 tsp RED CHILI POWDER

  • 1 tbsp OIL
  1. In a small bowl combine the coriander powder, salt, red chili powder, turmeric powder and lemon juice. Sprinkle little amount of water and make a smooth marinade. Check for the spice level and salt.

  2. Rub the marinade on a salmon fillet evenly and marinate it for 10 – 20 minutes in a refrigerator.

  3. In a hot skillet grease a tbsp of oil and place the marinated salmon fillet. Cook on both the sides until the salmon gets cooked thoroughly.
