  • 1 cup CARROTS SHREDDED
  • 1 cup MILK
  • 5 gms CASHEW NUTS RAW
  • 5 gms RAISINS
  • 1 no CARDAMOM
  • 2 tbsp GHEE
  • 2 tbsp SUGAR
  1. In a pan heat ghee, add the grated carrots and cook until the carrots become soft and color changes into little pale orange
  2. Add the milk and mix well. Cook until the carrot mixture becomes thick.

  3. Add the sugar, crushed cardamoms and cook until the sugar melts down and mix with the carrot mixture evenly and becomes thick. Garnish it with roasted nuts and raisins.

You can serve this carrot halwa warm or cold, depending on the weather.

  • 1 tsp Coriander Powder
  • 0.50 tsp Red Chili Powder (to taste)
  • 1.50 tsp Salt (to taste)
  • 2 tbsp Coriander Leaves Chopped
  • 1 pinch Turmeric Powder
  • 1 tsp Lemon Juice
  • 2 tbsp Butter or Ghee
  1. Peel the potatoes, boil or steam until tender and mash them until smooth.
  2. In a pan, heat oil, add cumin seeds, chopped onion and cook until the onion becomes soft.

  3. Add turmeric powder and mix well. 

  4. Add Mashed Potatoes, red chili powder, coriander powder, salt, lemon juice, and mix well. Check for the salt now and add accordingly. 

  5. Add chopped coriander leaves and mix well. Allow the potato filling to cool.

  6. Spread butter on both the sides of the slices of bread generously. Place the potato filling on a slice of bread and place another slice of bread on top of the filling and grill or cook on the stove top using a skillet until crispy.

  7. Cut the sandwich diagonally into a half using the knife and serve. Repeat the same with the rest of the bread slices and filling.

TOMATO THOKKU – HOMEMADE TOMATO MIX TO STORE IT FOR 15 DAYS

Tomato thokku is an excellent homemade product to make it once and store it for a while. It is a good replacement for tomato chutney or tomato pickle.

Tomato Thokku is an excellent side that goes with Rice, Chapati, Roti, Idli, Dosa, Curd Rice and Sambar Rice. Alternatively, mix it with rice to make an instant tomato rice. Thokku tastes tangy and spicy, and it can be used as a substitute for chutney or a pickle too.

 

 

The main benefit about this thokku is, it has a good shelf life, to make it once in bulk and store it for a while. This is handy for busy moms or bachelor.

Make this thokku in large quantities at once and store it in a glass container in the refrigerator. This thokku is convenient whenever you do not feel like cooking or too busy to cook or tired, and will be a lifesaving dish.

Smart Tips:

Let me share few important tips on how to make this thokku better. Making tomato thokku is easy at home, but preserving it for a long time takes some additional steps. So it is important to follow these few simple steps.

  1. Make sure to cook tomatoes completely without any moisture content. You can also use canned tomatoes.
  2. I used tamarind concentrate that helped to save time. If you are using raw tamarind extract, you have to cook it until no water or moisture content in it and also increase the quantity to 40 – 50 grams.

  3. I used fenugreek seeds, roast it until golden brown and powdered it. If you want, you can also use readymade store bought fenugreek powder. If you are using fenugreek powder, directly reduce the quantity to half.

  4. Make sure to cook thokku in a hot oil for at least 15-20 minutes on a medium flame. This will help the thokku to stay fresh longer.

 

 

Storing and Using:

Use dry, clean glass airtight container for storing. Make sure to cool down the mix before storing.

When you need the thokku, use a dry clean spoon to take the thokku out from the bottle. Moreover, refrigerate the remaining immediately.

Benefits:

The primary advantage of this product is it have good shelf life and tastes delicious. It can stay safe for minimum 15 days in the refrigerator and up to 30 days.

Recipe ideas using this product:

Tomato Rice – Just mix a small portion of thokku with hot white rice and serve it warm.

 

 

Side for chapati, dosa or idli – Use it as a side for chapati, idli or dosa instead of chutney.

 

 

Side for Yogurt or Sambar Rice – You can also serve this thokku with Yogurt or Sambar rice.

Tomato thokku is an excellent homemade product to make it once and store it for a while. It is a good replacement for tomato chutney or tomato pickle. 

  • 6 lb ROMA TOMATO
  • 2 tsp TAMARIND
  • 3 tbsp SALT (to taste)
  • 6 tbsp RED CHILI POWDER
  • 2.50 cup CANOLA OIL
  • 1 tbsp FENUGREEK SEEDS
  • 1 tsp MUSTARD SEEDS
  • 15 np CURRY LEAVES
  • 10 gms GARLIC CHOPPED
  • 1 tsp HING OR ASAFOETIDA
  1. Chop the tomatoes finely. In a heavy bottomed pan add chopped tomatoes, cover and cook until it becomes completely dry (you should not able to find any moisture content in it). 
  2. Keep stirring and mashing the tomatoes using a spatula in between to avoid burning. In the mean time dry roast fenugreek seeds until golden brown, allow it to cool and make a fine powder.

  3. Once the tomatoes cooked completely and become dry add tamarind concentrate, red chili powder, turmeric powder, salt and mix well.

  4. In a separate pan heat oil, add mustard seeds, asafoetida, curry leaves, chopped garlic and add it to the tomato mixture.

  5. Allow the tomato mixture to cook in oil for at least 15 – 20 minutes in a medium flame. The oil should float on top, it ensures there is no water in tomato mixture.

  6. Add fenugreek powder, mix well and turn off the heat. Allow it to cool completely and store it in a refrigerator.

How to serve tomato thokku?

You can also serve with Sooji Upma, Lemon Rice or Coconut Rice.

  1. Cut the chicken into small pieces. Chop the onion and tomato finely.
  2. In a pan heat oil add cumin seeds, chopped onion, green chilies, curry leaves and cook until the onion becomes soft.

  3. Add turmeric powder and mix well. Cook until the turmeric powder loses its raw smell.

  4. Add ginger garlic paste and cook until the ginger garlic paste loses its raw smell.

  5. Add chopped tomato, salt and cook until the tomatoes become soft and mushy.

  6. Add coriander powder, garam masala, red chili powder and cook until the spices lose its raw smell.

  7. Add chicken, half a cup of water, salt and mix well. Cover and cook the chicken on a medium flame till the chicken gets cooked thoroughly.

  8. Uncover the lid add freshly crushed black pepper and cook for another five minutes. Garnish the chicken with chopped coriander leaves and serve.

SOUTH INDIAN STYLE FISH CURRY

SOUTH INDIAN STYLE FISH CURRY

  • 2 lb FISH TILAPIA RAW
  • 5 no TOMATOES
  • 2 cup ONION CHOPPED
  • 10 tbsp OIL
  • 1 tsp FENUGREEK SEEDS
  • 0.50 cup COCONUT SHREDDED
  • 50 gms TAMARIND
  • 10 no CURRY LEAVES
  • 5 no GARLIC CHOPPED
  • 1 tbsp RED CHILI POWDER
  • 2 tbsp CORIANDER POWDER
  • 0.25 tsp CILANTRO (CORIANDER)LEAVES RAW
  • 0.50 tsp TURMERIC POWDER
  1. In a pan, heat 6 tbsp of oil, add 1 cup of chopped onion and cook until onions become soft.
  2. Add the 3 chopped tomato and cook until tomatoes become soft. Allow it to cool.

  3. In a mixie or blender, add cooked tomato and onion mixture, coriander powder, red chili powder, fennel seeds, grated coconut and grind to a smooth paste.

  4. In a separate pan, heat 4 tbsp of oil, add fenugreek seeds, chopped garlic, curry leaves, remaining 1 cup of onion, green chilies, turmeric powder and cook until onion becomes soft. 

  5. Add a chopped tomato and cook until tomato becomes soft. Add the grounded mixture and allow to boil for a minute.

  6. Soak tamarind in water for few minutes and squeeze the juice out of it and add it to the curry. Check for the salt and allow it to boil.

  7. Add the fish and cook for 5 minutes without mixing. Turn off the heat and keep the curry for minimum 2 hours for more flavor before serving.

How to serve fish curry?

Serve fish curry with rice. It tastes delicious the next day.

  1. In a pan, heat oil, add cumin seeds, add chopped onion and cook until the onion becomes soft.
  2. Add chopped tomato and cook until the tomato becomes soft and mushy.

  3. Add red chili powder, coriander powder, salt and mix well. Cook until the spices lose its raw smell.

  4. Add chopped capsicum, shredded carrot and mix well. Cook until the carrot gets cooked. 

  5. Spread carrot masala on a bread slice and place another slice of bread on top of the carrot masala. Repeat the same with the rest of the carrot masala and bread slices.

  1. In a saucepan, heat ghee over a medium heat. Add milk powder and mix well.
  2. Add milk and cook over a medium heat, keep stirring to avoid the palkova getting burned and sticking to the bottom of a pan.

  3. When it starts getting thick, add crushed cardamom, sugar and mix well. Cook further for a few seconds until the palkova becomes thick. Palkova is ready to serve.

KESARI (SOOJI HALWA) – A QUICK SWEET

In India, Rava Kesari is served on all the special occasions like wedding and birthday parties. It is an excellent dessert for the parties and potlucks. Rava Kesari is easy to make in larger quantities, from kids to everyone loves this dessert. If you are running out of time during special occasions to make something special for your family, you can make this sweet in just a few minutes. Smart Cooking Tips:

  • 0.50 cup SOOJI (RAVA)
  • 1.50 cup WATER
  • 3 tbsp GHEE
  • 5 gms RAISINS SEEDLESS
  • 7 gms CASHEW NUTS RAW
  • 0.75 cup SUGARS GRANULATED
  1. In a pan heat two tbsp of ghee, add cashew nuts, raisins, and roast until the cashew nuts color changes to golden brown and the raisins plump up. Remove the roasted cashew nuts and raisins from ghee and keep aside until needed.
  2. Add sooji and roast over a medium flame until the color changes slightly (keep stirring to avoid the sooji getting burned). Remove the sooji from heat and set aside until needed.

  3. In the same pan add water and bring it to a boil. Add sooji and mix well, cook until the sooji mixture becomes thick (keep on stirring to avoid forming the lumps).

  4. Add sugar and mix well. Cook until the kesari becomes thick. Add the roasted cashew nuts, raisins and remaining one tbsp of ghee and mix well. Kesari is ready to serve.

How to serve kesari?

Serve kesari warm.

CARROT COOKIES – AN EASY COOKIE RECIPE FOR KIDS

Carrot cookies with oatmeal is an easy and healthy homemade cookie recipe for kids. It is a soft and chewy eggless cookie recipe with carrots and oatmeal.

Eggless Homemade Cookies:

Homemade cookies are a tasty and delicious snack for kids. Carrot cookies are healthy that is made with freshly grated carrots, oatmeal, and whole wheat flour. I added sugar in this cookie; you can also replace it honey or maple syrup for a healthier option. Cookies are easy and simple to make at home all you need is few ingredients, baking sheet and oven. I often bake carrot cookies at home because it includes oatmeal and carrots that are an excellent way to incorporate carrot and oatmeal in kids diet. Sometimes in a busy morning I serve carrot cookies for breakfast too. Oatmeal and wheat flour in this cookie helps to make us feel fuller for a long time.

Smart Cooking Tips:

  1. I used 1 tbsp of ground flax seed in this recipe; you can replace it with one egg. Flax seed is an excellent replacement for the eggs in baking. Replace one egg by soaking one tbsp of ground flax seeds in three tbsp of cold water for 5 minutes or until it becomes sticky egg like consistency.
  2. The dough will be thick and sticky so mix properly until all the ingredients mix properly.

  3. You can replace the sugar with honey or maple syrup, but make sure to reduce the melted butter.

  1. You can also shape it into different shapes using the cookie cutters.
  2. The cinnamon powder gives an excellent taste and flavor to the carrot cookies. If you do not have it at home, you can easily make it at home by grinding cinnamon sticks to a fine powder in the dry blender. You can also make cinnamon powder in bulk and store it in an airtight container for later use.


Oatmeal Cookies with Carrot:

Oatmeal cookies are chewy and healthy, also tastes delicious. Carrot cookies are one excellent recipe using oatmeal. Adding oats make a carrot cookie chewy and healthy. Oatmeal cookies are an excellent way to include oats in the diet, also it helps to keep us fuller for a long time. Because fiber content in oats takes a long time to digest and makes us feel fuller for a long time. Though these cookies are chewy, it is a soft and flavorful that is loved by kids.

IDLI BATTER USING A BLENDER FOR SOFT IDLIS

Idlis are the healthy breakfast for everyone, especially for babies. You can grind the fresh batter for idlis at home in few minutes using the Blendtec.

Benefits of Idli:

Idli is an easy and healthy steamed rice cakes; it is an ideal breakfast in many South Indian households. Idlis are an excellent food for babies that stays light and gentle in the tummy. It is simple to make at home but to grind the batter is a time-consuming part of making idlis. Before I grind batter for idli using a grinder, it takes lots of time for grinding and cleaning. Now, I am grinding batter three times in a week for the fresh idlis without any hassle using my new blender Blendtec. It is a high power blender that grinds the batter in just five minutes, and the best part is easy to clean after grinding. Also, I am surprised with the result; the idlis just turned out so soft and spongy.

How to make soft idlis?

Soft idlis are easy and simple to make at home, but it involves simple cooking tips and techniques. The most important step in making soft idlis are the rice and urad dal quantities. I always use 2:1/2 ratio, 2 cups of idli and 1/2 a cup of urad dal. You can also use 3:1 ratio, 3 cups of idli rice and 1 cup of urad dal. These twos are the ideal quantities for the soft idlis.

 

Another important step is fermenting the batter, properly fermented batter yields light and fluffy idlis. For fermenting the batter, mix the urad dal batter and rice batter together using your hand. The warmness from you hand helps the batter to ferment quickly.

Also, the fermentation process requires warm temperature. In summer, you don’t have to do anything, just mix the urad dal batter and rice batter together with hand and leave the batter on a kitchen countertop overnight for fermentation. In cold weather, you have found the warm place for fermentation. Keeping the batter inside the conventional oven with a light on is an excellent option. The last important tip is grinding the urad dal to a soft and fluffy batter by adding water little by little.


Delicious dishes using the Idli Batter:

Idli batter is not only meant for making idle only; but you can also make a variety of dishes like dosa, paniyaram and uthappam. The first day with the fermented batter, I make idlis then second day dosa and the third day paniyaram and uthappam.

For the moms, idli batter is an excellent time-saving ingredient in your kitchen and it helps to reduce eating the unhealthy fast foods. Because you can grind the idli batter once and store up to three days in a refrigerator. Whenever you feel tired or bored to cook, you just make idlis or dosa with simple tomato chutney or coconut chutney for a quick and filling meal. I must say Idli batter is one of my favorite ingredients so far. Being a South Indian, minimum two times in a week I make Idlis and Dosas.

Smart Cooking Tips for grinding idli batter using a Blendtec:

  1. Add cold water when grinding the batter. Because Blendtec is a high power blender that produces heat while grinding, so the cold water helps to protect the batter from the heat.
  1. Grind urad dal to a soft and fluffy batter by adding water little by little. Choose the batter option in Blendtec for 3 – 4 times and grind until the urad dal turns into a light and fluffy batter.

IDLI BATTER USING A BLENDER FOR SOFT IDLIS

Idlis are the healthy breakfast for everyone, especially for babies. You can grind the fresh batter for idlis in few minutes often using the Blendtec.

  • 2 cup Idli Rice
  • 0.50 cup Urad Dal
  • 0.50 tsp Fenugreek Seeds
  • 1 tsp Salt
  1. Wash urad dal once and soak in water for at least 4 hours. Wash idli rice (parboiled rice) 2 – 3 times and soak rice and fenugreek seeds together in water for at least 4 hours. 
  2. After four hours discard the water from soaked urad dal and add the urad dal in a Blendtec jar. Add cold water little by little and grind it to a smooth batter. Choose batter option and grind for 3 – 4 times until the batter is smooth and fluffy. Transfer the batter to a wide bowl and set aside until needed.

  3. Strain and discard the water from soaked rice and add rice to a blendtec jar. Grind the rice to a smooth batter (little coarse batter is fine) by adding cold water little by little. Choose batter option for 2 – 3 times and grind until smooth. Transfer the rice batter to a wide bowl with urad dal batter, add salt and mix well with hand.

  4. Cover the bowl with a lid and set the batter for 8 hours or overnight for fermentation. After fermentation, the batter will rise in its quantity and the texture of the batter is light and foamy.

  5. Mix the batter once with ladle and add water if the batter is too thick. Now the idly batter is ready. 

  6. Grease the idli molds with oil and pour a spoonful of batter in each mold and steam the idlis in Idli cooker for 10 – 12 minutes or until you hear the whistle sound. 

  7. Let the idlis in the idly cooker itself for 2 – 3 minutes and transfer the idlies to a serving plate using a spoon. Hot steamed idlis are ready to be served.

 

How to serve idli?

Serve idli with tomato chutney or coconut chutney and sambar.

Preparation of Ragi Malt

  • 0.25 cup Ragi Flour
  • 1.50 cup Water
  • 2 cups Buttermilk
  • 1.50 tsp Salt (to taste)
  • 1 tsp Water
  • 0.50 tsp Mustard Seeds
  • 1 pinch Asafoetida (hing)
  • 1 tsp Oil
  • 5 no Curry Leaves Chopped
  • 1 no Green Chilies Chopped
  1. Dry roast the ragi flour over medium heat for 4 to 5 mins until nice aroma comes out.
  2. Add water, mix well quickly and cook until the ragi flour becomes thick. Allow to cool.

  3. Blend cooked ragi and buttermilk together until smooth in a blender or using a hand mixer.

  4. For tempering: In a small saucepan, heat oil, add mustard seeds and let it splutter. Add asafoetida and mix well in the oil. Add curry leaves, green chilies and mix well. Add to the ragi malt and serve.

How to serve Ragi Malt?
