Masala Peanuts

Masala peanuts (Peanut Bhujia) are the crunchy and gluten-free snack. It is simple to make in just a few mins and stores well for a couple of weeks.

Masala Peanuts in Microwave Oven:

You can make crunchy masala peanuts in the microwave oven with less amount of oil. It tastes just like the deep fried ones though personally, I taste the slight raw besan flour in it.

  1. Soak the peanuts in water for a minute. Drain and discard the water from peanuts and pat them dry using a clean kitchen cloth.
  2. In a separate bowl, combine besan flour, rice flour, red chili powder, salt and mix well.

  1. Combine both peanuts and flour mixture together, sprinkle water little by little until the flour mixture coats evenly on the peanuts.
  2. Spread the peanuts on a greased wide microwave oven safe plate in a single layer. The peanuts may not be taste crispy right after the frying, once it cooled down the peanuts turn crispy.

Smart Cooking Tips:

  1. You can bake or roast the masala peanuts in the microwave or conventional oven.
  2. Add red chili powder according to your taste. You can add other spices like cumin powder, fennel powder, hing and coriander powder.

  3. Peanuts may not be crispy right after the deep frying. Once cooled down it becomes crunchy.

Large batches of masala peanuts are easily made in the conventional oven. It is a healthier option of making masala peanuts. Baked masala peanuts taste similar to the deep fried ones.

  1. Soak the peanuts in water for a minute (this step helps to coat the peanuts with flour mixture).
  2. In a bowl, add besan flour, salt, red chili powder, rice flour and mix well.

  1. Combine both peanuts, besan flour mixture and mix well. Drizzle oil and mix well. Sprinkle water little by little and mix well until the besan flour mixture coated evenly on the peanuts.
  2. Pre-heat the oven to 425 degrees Fahrenheit and line the baking tray with parchment paper, spread peanuts in a single layer, drizzle cooking oil on top of the peanuts and bake for 15 minutes until the flour mixture turns crispy. Let the peanuts cool completely and serve.

  1. Soak peanuts in water for a minute (this step helps to wet the peanuts and coat with the besan flour mixture).
  2. In a separate bowl, add besan flour, rice flour, red chili powder, salt and mix well.

  3. Combine both peanuts and flour mixture together, add water little by little and mix well until the peanuts get coated evenly.

  4. In a hot oil, drop the peanuts little by little and deep fry over a medium flame until the outer coating turns crispy. The peanut may not be crispier right after the frying, once cooled down it turns crispy.

Smart Cooking Tips:

  1. Add water little by little and grind to a smooth batter. If you soak moong dal for a long time, you do not require more water to grind.

Moong Dal Pakoda in Paniyaram Pan:

Paniyaram is a popular South Indian dish that is cooked in a specially designed pan. It is also known as appe pan. You can make varieties of recipes using appe pan. You can make deep fried snacks healthier using the appe pan. I tried moong dal pakora in the appe pan it turned out good though little denser than the deep fried ones.

Unfortunately, I forget to click the pics. Next time, I will make sure to click the pics before finishing the pakora.

  1. Heat a few drops of oil in each mold in the paniyaram pan and fill each mold with the batter.
  2. Cover and cook on both the sides until the pakoras get cooked. Serve with chutney or sambar.

  1. Wash and soak the moong dal for 4 – 5 hours. Strain and discard the water from moong dal.
  2. Grind moong dal with ginger, green chilies, and salt to a smooth batter by adding water little by little.

  3. Add chopped onion and mix well. Drop the batter little by little in the hot oil and deep fry until the pakodas turns crispy.

Rajma Masala

Rajma masala is an easy, healthy and delicious side dish with softly cooked red kidney beans and spices. It goes well with the rice and chapati.

Rajma chawal is a popular dish in Punjab. Rajma masala served with white rice is known as rajma chawal. Spicy rajma masala and white rice together make a delicious, filling and balanced meal.

Smart Cooking Tips:

  1. You can use the canned red kidney beans in the recipe. Rinse the canned beans in the water before adding it to the masala.
  2. You can heavy cream in the end that gives a mild sweet taste to the curry.

Rajma Masala in Slow Cooker:

You can cook rajma masala in the slow cooker for a flavorful curry. Red kidney beans cooked for a long time with onion tomato gravy in the slow cooker for a delicious masala.

    1. Rinse red kidney beans in water for 3 to 4 times and soak for 6 to 8 hours or overnight.
    2. In a pan, heat oil, bay leaf, chopped onion and cook until the onion becomes soft.
    3. Add turmeric powder and cook until the turmeric powder loses its raw smell.
    4. Add ginger garlic paste and cook until the ginger garlic paste loses its raw smell.
    5. Add chopped tomato and cook until the tomato becomes soft.
    6. Add red chili powder, coriander powder, garam masala, salt and mix well. Cook until the spices lose its raw smell.
    7. Add soaked red kidney beans, water just to cover the red kidney beans and mix well. Cover and cook for 4 to 5 hours or until the beans turns soft. Garnish with dried fenugreek (methi) leaves and serve.

  • 1 tbsp Ginger Garlic Paste
  • 0.50 tsp Turmeric Powder
  • 1 tbsp Coriander Powder
  • 2 tsp Red Chili Powder (to taste)
  • 1 tsp Garam Masala
  • 1 tbsp Dried Fenugreek (Methi) Leaves for Garnishing
  • 3 tbsp Oil
  1. Rinse the red kidney beans in water for 3 to 4 times and soak for at least 6 hours or overnight. After 6 hours of soaking drain and discard the water from beans.
  2. In a pressure cooker, add red kidney beans, fresh water, salt and cook until 8 whistles. Let the pressure cooker to cool naturally.

  3. In a saucepan, heat oil, add bay leaf, chopped onion and cook until the onion turns soft.

  4. Add turmeric powder and cook until the turmeric powder loses its raw smell.

  5. Add ginger garlic paste and cook until the ginger garlic paste loses its raw smell.

  6. Add chopped tomatoes and cook until the tomatoes become soft and mushy.

  7. Add coriander powder, salt, red chili powder, garam masala and mix well. Cook until the spices lose its raw smell. It takes 2 to 3 minutes.

  8. Add cooked beans with the liquid content and cook until your desired gravy consistency. Garnish with dried fenugreek leaves (methi leaves) and serve.

  1. Wash the bitter melon, cut in the center, remove the seeds and chop them finely. 
  2. Add a generous amount of salt to the chopped bitter melon and marinate for 15 to 20 minutes. The bitter melon oozes water after marinating with salt, squeeze out the water content from bitter melon and rinse thoroughly in the fresh water. This step is optional it helps to reduce the bitterness in the bitter melon.

  3. In a pan, heat oil, add chopped onion and cook until the onion turns soft.

  4. Add bitter melon, salt, turmeric powder, red chili powder, coriander powder and mix well.

  5. Sprinkle little amount of water, cover and cook until bitter melon turns soft. Uncover and cook for a few minutes until the bitter melon color changes to golden brown. Bitter melon stir fry is ready to serve.

Peanut Sundal

Peanut sundal is an easy, healthy and protein-packed snack, simple to make in just a few mins. Soft boiled peanuts, seasoned with spices, and coconut.

Peanuts are rich in protein, anti-oxidants, vitamins, minerals and healthy fatty acids. The fatty acids in the peanuts help to reduce the bad cholesterols. This peanut sundal is an excellent snack option, it is easy and simple to make in just a few minutes. You can soak the peanut in water before you head to the work. In the evening, you can boil the peanuts and season it and enjoy with a cup of tea or coffee. Kids would also love this delicious snack.

  1. You can boil the peanuts until soft in the saucepan but it takes slightly longer time compared to the pressure cooker method.

Peanuts are widely used in the Indian cooking. Peanut chutney, onion peanut chutney, peanut chat, peanut curry are the popular Indian recipes. Skinned and roasted peanuts are available at the Indian grocery stores that help to make the dishes quickly. Roasting and skinning the peanuts are time-consuming task though it is simple to do it at home. Dosa and peanut chutney is my favorite breakfast.

Peanut Sundal

Peanut sundal is an easy, healthy and protein-packed snack. Boiled peanuts, seasoned with spices, and coconut.

  • 1 cup Raw Peanuts
  • 0.50 cup Onion
  • 1 tsp Salt (to taste)
  • 0.50 tsp Mustard Seeds
  • 1 tsp Urad Dal
  • 2 no Dry Red Chilies
  • 2 tbsp Grated Coconut
  • 1 pinch Asafoetida
  • 1 tbsp Oil
  • 2 cups Water
  1. Soak the peanuts in water for 5 hours. After 5 hours, strain and discard the water from the soaked peanuts.
  2. In a pressure cooker, add peanuts, fresh water, salt and pressure cook for 5 whistles. Let the pressure to cool naturally.

  3. In a skillet, heat a tbsp of oil, add mustard seeds and let it splutter. Add urad dal and saute until the color changes to golden brown.

  4. Add asafoetida and mix well in the oil. Add dry red chilies and saute in the oil. Add the cooked peanuts, grated coconut and mix well. Peanut Sundal is ready to serve.

How to make stuffed mirchi bajji

Stuffed mirchi bajji is an easy and delicious snack recipe. Banana peppers deseeded, stuffed with mashed potato, coated with the besan flour and deep fried.

You can stuff the banana peppers with mashed potatoes or grounded peanuts with spices or grated paneer. I used mashed potato stuffing, banana peppers, and mashed potato together makes a delicious combo.

Spicy Roasted Grams Stuffing:

  1. Grind roasted grams with red chili powder, ajwain, cumin powder, hing, chat masala powder, tamarind and salt with a little amount of water to a smooth paste.

  1. Slit open the banana pepper, stuff the roasted gram paste, coated with the chickpea batter and deep fried.

Stuffed Mirchi Bajji

Stuffed mirchi bajji is an easy and delicious snack recipe. Banana peppers deseeded, stuffed with mashed potato, coated with the besan flour and deep fried.

  • 3 no Banana Peppers
  • 2 no Potato Medium Size
  • 2 tbsp Oil
  • 1 cup Chickpea (besan) Flour
  • 2 tbsp Rice Flour
  • 2 tsp Red Chili Powder (1 tsp for stuffing and 1 tsp for batter)
  • 1 pinch Turmeric Powder
  • 2 tsp Salt (to taste)
  • 1 pinch Asafoetida (Hing)
  • 1 cup Oil (for frying bajji)
  • 1 no Onion (Medium Size)
  1. For stuffing: Wash and peel the potato. In a saucepan, add water, potatoes, salt and boil until the potatoes become fork tender and mash until smooth.
  2. In a pan, heat oil, add chopped onion and cook until the onion becomes soft.

  3. Add mashed potato, turmeric powder, salt, red chili powder and mix well. Cook for a couple of minutes until the spices gets well combined with the potato.

  4. For Batter: In a medium-size bowl, add besan (chickpea) flour, rice flour, turmeric powder, asafoetida (hing), red chili powder, salt and mix well. 

  5. Add water gradually and make a smooth batter without lumps.

  6. Slit open the banana peppers, remove the seeds and stuff the potato mixture. Chop them into small pieces and fry the bajjis until the color changes to golden brown. Mirchi Bajji is ready to serve.

How to serve stuffed mirchi bajji?

Serve stuffed mirchi bajji as a snack or appetizer with coconut chutney or ketchup or any sauce of your choice.

  • 1 no Large Bottle Gourd (Lauki)
  • 1 no Onion Medium Size Chopped
  • 2 tbsp Oil
  • 1 tsp Cumin Seeds
  • 2 tbsp Coriander Leaves

  • 1 tsp Pepper Powder
  1. Wash, peel, and chop the lauki into small cubes.
  2. In a saucepan, heat oil, add cumin seeds, chopped onion and cook until the onion becomes soft.

  3. Add lauki cubes, coriander leaves, salt and enough amount of water just to cover the lauki pieces. Cover and cook until the lauki becomes soft.

  4. Let it cool and blend to a smooth puree in the blender. Transfer to a saucepan again, add water if you want and bring the soup to your desired consistency. Bring to a boil, add pepper powder, mix well and serve.

Spicy plantain fry is an easy and spicy side dish that goes well with rice varieties. It is easy and simple to make in just a few minutes.

  • 2 no Green Plantains
  • 1 pinch Turmeric Powder
  • 1 tsp Salt (to taste)
  • 2 tbsp Oil
  • 2 tsp Red Chili Powder
  • 2 tsp Coriander Powder
  1. Peel, cut the plantains roughly and slice them thinly as I shown in the picture.
  2. In a saucepan, boil the sliced plantains with salt and turmeric until fork tender and immediately strain the water from plantains.

  3. In a skillet, heat oil, add the boiled plantains, salt, red chili powder, coriander powder and mix gently until the spices get coated evenly on the plantains.

  4. Roast until the plantains become crispy and serve.
