  1. Pre-heat the oven to 400 degrees. Wash and pat the okras dry using a clean kitchen towel.

  2. Cut the tops off okra and slice lengthwise. Add salt, coriander powder, red chili powder, oil and mix well to coat. 

  3. Grease the baking sheet with oil and arrange okras in a single layer. Bake in a pre-heated 400 degrees oven for 10 mins or until the color starts changing to golden brown.

This is the first green smoothie, I tried it for breakfast. A question was running in the back of my mind whether it would taste good or at least, I would able to finish it without wasting it. I didn’t sip it first, I asked my husband to taste it and his face reaction was ok. So after him, I tasted it, Wow!! I liked it a lot. A smoothie with so much of nutritious tastes sweet without sugar and creamy without milk or yogurt. Thoroughly enjoyed it for breakfast, and I am going to make it for my breakfast for at least twice a week.

 

SIMPLE APPLE KALE SMOOTHIE

A simple apple kale smoothie is a healthy, sugar free, vegan and low calorie breakfast. It is one of the great smoothie for weight loss and dieting.

  • 1 no APPLE

All these ingredients together, makes this smoothie perfect for breakfast. It is also a great refreshing drink. To make it more nutritious, you could also add flax seeds or chia seeds. In this recipe, I used fresh large strawberries, but you can also use frozen strawberries.

PAPAYA MILKSHAKE OR PAPAYA SMOOTHIE

Papaya Milkshake is a cold and refreshing drink to enjoy in summer. Papaya is loaded with nutrition and also helps in digestion. It’s soft texture and sweet taste make a smooth and sweet smoothie. If you do not like Papaya like me, but at the same time you want to include it in your diet because of its rich nutrition profile this smoothie is an excellent way to incorporate it in the diet.

Smart Cooking Tips:

1. Make sure to choose a ripe papaya, because unripe papaya taste bitter, and it will spoil the smoothie taste.

2. Adding Vanilla extract helps to give a nice flavor and aroma to this smoothie. For flavoring, you can also add cardamom powder instead of vanilla extract.

3. Check for the taste of papaya before adding honey or sugar, because papaya itself tastes sweet. If the papaya is not sweet, adjust adding sweetener according to your taste.

4. Adding Ice Cubes are optional, you can also place chopped papaya in the freezer for some time and make a smoothie with frozen papaya.

5. I used whole milk in this recipe; you can also use 2% reduced fat milk.

My little kid like this laddoo, so I used to make it quite often and store it in an airtight container. What else a mommy need, a healthy snack for kid with a good shelf life?

PEANUT FLAX SEED LADOO

Peanut Flaxseed Laddoo is a healthy and yummy snack for kids. Grounded Peanuts, flax seeds, sesame seeds and jaggery together makes a healthy and energetic snack. You could also store these laddoos for up to a week in an airtight container. 

  • 1 cup Peanuts
  • 0.25 cup Flaxseed
  • 1 cup Sesame Seeds
  • 1 cup Jaggery
  1. Dry roast the peanuts separately, until the color changes into golden brown and grind it a fine powder. If you are using the peanuts with skin, dry roast it and discard the peanut skin.

  2. Dry roast the sesame seeds separately, until the color changes into golden brown and grind it a fine powder.

  3. Dry roast the golden flax seed for a second. Blend powdered peanuts, powdered sesame seeds, roasted flax seeds and jaggery powder together, until smooth.

  4. Transfer it to the bowl and form ladoos out of it (if it is difficult for you to form laddoos, just slightly warm up the mixture or mix in the melted warm ghee, this would help you to make perfect laddoos).

Usually, I cook rice varieties or chappati (wheat tortilla)  for my dinner that is high in carbohydrates and ended up in weight gain. I am seriously trying to cut down some pounds, the first thing I heard was to reduce the number of carbs and sugar intake and increase the amount of protein. For first few days, I tried grilled chicken, and slowly I became bored of it and started searching for some interesting and filling low-carb dinner recipe. I found lettuce wraps recipe in Pinterest, looks interesting for me to try it. I am a fond of spices and its flavor, so I wanted to try the spicy chicken lettuce wraps. I made spicy chicken lettuce wraps for dinner two weeks back and my little kid Aldrich looks little disappointed because he is not much interested in spices, though he is ok with mild spice level. So I give a twist to spicy chicken lettuce wraps by adding Chinese sauces like ketchup and sriracha sauce that gives mild sweet and sour flavor to the chicken. It worked well with him, and he finished his dinner with a happy face.

1. Make sure to chop the chicken into small pieces, it helps to blend with the spices and sauces easily, and the chicken will be more flavorful.

2. I used Romaine Lettuce in this recipe; you can also your favorite choices like Iceberg or butterhead.

  • 1 tsp RED CHILI POWDER
  • 0.75 tsp SALT TABLE
  • 1 tsp GINGER GARLIC PASTE
  • 1 tbsp TOMATO KETCHUP
  • 1 tsp SRIRACHA CHILI GARLIC SAUCE
  • 0.25 tsp TURMERIC GROUND
  1. Chop the chicken into small pieces (ground chicken also works well for this recipe).

  2. Wash the romaine lettuce and keep it aside until needed.

  3. In a pan heat oil add chopped onion and cook until it becomes soft. Add turmeric powder and ginger garlic paste. Mix well and cook until ginger garlic paste loses its raw smell.

  4. Add chopped chicken pieces, coriander powder, salt, red chili powder, garam masala powder and mix well. Cover and cook until the chicken gets cooked completely.

  5. Once the chicken is done add tomato ketchup, sriracha sauce and give a good mix. Turn off the heat and allow it to cool.

  6. Place a spoonful of cooked chicken on the lettuce and serve. Garnish it with sliced onion if desired.

  • 1 cup BASMATI RICE
  • 2 tbsp LEMON JUICE RAW
  • 1 tsp SALT TABLE
  • 1 tbsp OIL
  • 0.50 tsp MUSTARD SEEDS
  • 0.50 tsp URAD DAL
  • 1 tsp CHANNA DAL RAW
  • 0.25 tsp HING OR ASAFOETIDA
  • 0.50 tsp TURMERIC GROUND
  • 0.50 tsp CUMIN SEED
  • 2 no RED CHILIES
  • 2 no GREEN CHILIES
  • 0.25 cup PEANUTS
  • 0.50 tsp GINGER GRATED
  1. Cook rice separately and allow it to cool. Leftover rice works best for this recipe.

  2. Gather all the ingredients and keep it closer to you to grab quickly. 

  3. In a small pan heat oil add dry red chilies, mustard seeds and allow the mustard seeds to splutter. Add cumin seeds, urad dal and cook until urad dal becomes light brown.

  4. Followed by add channa dal and cook until the color changes into light brown. Add asafoetida and mix well in the oil.

  5. Add chopped ginger, green chilies slit, turmeric powder and mix well in the oil. Add peanuts and cook until peanuts become crunchy. All these processes take only 2 – 3 minutes.

  6. Add the tempered items to the white rice, add lemon juice, salt and check for the taste and add salt accordingly. Garnish with chopped coriander leaves and serve.

As we all know Carrot is an excellent source of  Vitamins and Anti-Oxidants. Regular consumption of carrot will help reduce cholesterol and blood sugar regulation. High Antioxidants called beta-carotene helps to prevent cancer.

Carrot is also believed to give skin softer and smoother.

How to make Carrot Rice?

Carrot rice is an easy and simple rice dish. Avoid overcooking the carrot, as soon you add it to the pan, give a quick mix with the onions and spices and turn off the heat. Carrots lose its nutritional values if you cook for a longer time.

Avoid adding too much salt in the carrot mixture. After mixing cooked rice with carrot mixture, check for the salt and add accordingly.

Indian Spices:

I added Curry Powder in this recipe; you can also substitute with Sambar Powder. Add curry powder or sambar powder according to your taste.

How to cook white rice?

White rice can be cooked in many ways like boil and strain method on a stove top, using a rice cooker and pressure cooker.

Add water according to the quality of your rice. I used long grain Royal Basmati rice for making this recipe. So I added 2 cups of water for 1 cup of rice. You can also use other rice varieties like Sona Masoori, etc.

I never used brown rice for this recipe, if you are going to try it, please share your feedback.

  2. Heat oil in a pan, add cumin seeds, curry leaves, onion, green chilies and cook until onion becomes soft. 

  3. Add the grated carrot, curry powder, salt and mix well. Add the cooked rice, mix well and serve.

  • 2 no BOILED EGGS
  • 275 gms POTATO
  • 1 tsp RED CHILI POWDER
  • 1 tsp CORIANDER POWDER
  • 1 tsp SALT TABLE
  • 0.25 cup BREAD CRUMBS
  • 1 no EGG (for outer coating)
  • 0.50 cup OIL
  1. Slice each hard-boiled eggs into a half.

  2. Boil potatoes separately until tender and mash to a smooth texture. Add red chili powder, coriander powder, salt and mix well. 

  3. Beat the egg separately in a small bowl and keep it ready. Spread the bread crumbs on a plate.

  4. Cover the sliced boiled eggs with mashed potato mixture evenly. Dip in the beaten egg and roll in the breadcrumbs until the breadcrumbs get coated evenly.

  5. Shallow fry or deep fry the eggs chops until the color changes to golden brown.

Though it is a high-calorie sweet with a lot of ghee and sugar but worth trying it at home for any special occasions like diwali, birthday parties and wedding anniversary.   1. Sift besan flour separately using a flour sifter and keep it ready. Grease the square shaped bowl or plate with ghee and set aside until needed.

  2. Combine oil and melted ghee separately in a bowl and keep it ready.

  3. In a sauce pan add a cup of sugar, a cup of water and boil until the syrup becomes slightly thick and sticky.

  4. Gradually add the besan flour and mix well without leaving any lumps.

  5. Add ghee and oil mixture and mix well. Cook over a low – medium flame until the besan mixture becomes thick. Keep stirring to avoid the besan flour getting burned.

  6. Transfer to a greased square shaped bowl or plate and allow to cool completely. Cut them into small rectangle shapes using a knife and serve.

I have heard from few of my friends that they do not like chicken livers because of the smell and taste, even I don’t like chicken livers in curries and gravies. Recently, my sister shared this recipe, the spices, fennel seeds and onion helps to add an excellent flavor to this recipe. I don’t believe that this recipe includes chicken livers, it tastes so flavorful and spicy. My little son “Aldrich” would also like this chicken liver fry.

1. Saute the marinated chicken livers separately in oil. Because chicken livers are soft and tend to become crumble quickly and mix with the gravy without staying in the shape.

2. Saute the chicken livers over a medium heat this helps to prevent the chicken livers from getting burned.

  • 1.25 lb CHICKEN LIVER
  • 2 cup ONION CHOPPED
  • 7 tbsp OIL
  • 1.50 tsp SALT TABLE
  • 2 tsp RED CHILI POWDER
  • 1.50 tbsp CORIANDER POWDER
  • 1.50 tbsp GINGER GARLIC PASTE
  • 0.75 tsp TURMERIC GROUND
  • 1 tsp GARAM MASALA
  • 1 tsp FENNEL SEED
  • 0.50 tsp PEPPER BLACK
  • 1 tsp LEMON JUICE RAW
  1. Marinate the chicken livers with 0.50 of turmeric powder, 1 tsp of salt, 1 tbsp of ginger garlic paste, 1 tsp of red chili powder, 1 tbsp of coriander powder and lemon juice for half an hour in a refrigerator.

  2. Heat 5 tbsp of oil in a wide saucepan and add the marinated chicken livers. Saute in the oil until the chicken livers get cooked thoroughly. Remove the chicken livers from the oil and keep aside until needed.

  3. In a separate saucepan, heat oil, add fennel seeds, sliced onion, curry leaves and cook until the onion becomes soft.

  4. Add the remaining turmeric powder and cook until the turmeric powder loses its raw smell.

  5. Add the remaining ginger garlic paste and cook until the ginger garlic paste loses its raw smell.

  6. Add the remaining red chili powder, coriander powder, garam masala, pepper powder, salt, little amount of water and mix well. Cook until the gravy becomes thick.

  7. Add the fried chicken livers and mix well until. Cook over a medium flame for 5 – 10 minutes. Garnish with the chopped coriander leaves and serve.

  4. Add chopped mint leaves, coriander leaves, tomatoes and mix well. Cook until the tomatoes become soft and mushy.

  5. Add coriander powder, garam masala, red chili powder, salt and mix well. Cook until the spices lose its raw smell.

  6. Add eggs and mix well. Cook until the eggs get cooked thoroughly. Add soaked rice and mix well. 

  7. Add 3 cups of water, 1 cup of coconut milk and check for the salt now and add accordingly. When the water starts boiling, cover the pan with a tight lid and cook until the water gets absorbed by the rice completely. 

  8. Remove the pan from heat and mix the rice gently. Let the biryani covered in the pan itself for 10 mins and serve.

French Toast is a kids pleasing sweet breakfast. Egg, Vanilla extract, Butter, Cinnamon, and Milk together makes a rich and yummy toast. It is a great way to incorporate egg into the kids diet. 

  • 1 no EGG
  • 0.50 tsp VANILLA EXTRACT
  • 2 tbsp MILK
  • 1 tsp UNSALTED BUTTER
  • 3 no WHITE BREAD
  • 2 tsp SUGARS GRANULATED
  • 0.25 tsp CINNAMON
  1. Whisk egg, milk, sugar, cinnamon powder and vanilla extract together.

  2. Grease the skillet with butter. Slice the bread diagonally and dip into the egg mixture.

  3. Place it on the hot tawa and cook on both the sides until the color changes into golden brown.

Potato bread rolls are an easy and crispy kids friendly appetizer. These bread rolls are easy and simple to make in few minutes. Also, these bread rolls are an excellent snack for picnics. It makes kids feel fuller for a long time. You can serve these potato rolls simply with ketchup or tomato sauce. My little son Aldrich loves these rolls, so I make it for the evening snack also. Sometimes I pack these rolls for his lunch with some steamed veggies and sliced fruits for a filling meal.

Smart Cooking Tips:

1. Make sure to roll the bread into flat using a rolling pin. This helps to make a smooth bread roll without any breaks.
2. Apply water on the edges to seal the openings properly to avoid the potato filling from falling out while roasting.

4. You can deep fry the rolls instead of roasting.

  • 8 no WHEAT BREAD
  • 300 gms YELLOW POTATO
  • 0.25 cup PEAS GREEN RAW
  • 0.50 tsp SALT TABLE
  • 1 tsp PAPRIKA
  • 1 tsp LEMON JUICE RAW
  • 2 tbsp OIL
  1. Boil the potatoes and peas together until soft. Mash the potatoes and peas to a smooth paste when they are still warm. Add salt, lemon juice, red chili powder and mix well.

  2. Divide the potato mixture into small balls and shape them into the cylindrical or oval and keep it ready.

  3. Take a slice of bread, cut the edges using a knife and roll it into flat using a rolling pin.

  4. Apply water to one edge of a bread and place the potato filling on the other end. And roll the bread and seal the edges by pressing gently ( if the roll is not sealing properly, apply extra water to the rough side of a bread and seal it.

  5. Heat oil in a pan and place the bread potato rolls and cook until the bread color changes into golden brown.
