You can easily change this vegan oatmeal recipe to the banana nut muffin recipe by adding chopped nuts. I have tried adding a quarter cup of chopped pecans in this recipe, it turned out awesome. Nuts give nice crunchy taste to the muffins with bonus nutrition to the muffins. You can add any of your favorite chopped nuts.
Smart Cooking Tips:
- You can replace the white sugar with dates. If you would like to add dates, add up to 3/4 cup of chopped dates.
2. Adding chocolate chips are optional, you can add chopped nuts too.

This banana muffin is a healthy muffin with oats. You can replace the sugar with dates for even more healthier muffins. This is my favorite breakfast muffin ever, my son Aldrich too loves this muffin. I serve this muffin with a cup of milk for the breakfast or afterschool snack. Vegan Banana Oatmeal Muffins
Vegan banana oatmeal muffins are an easy breakfast muffin with only a five ingredients. These muffins taste soft, sweet and moist.
- 3 no Banana
- 2 cups Oats
- 0.50 cup Sugar
- 1 tsp Baking Soda
- 0.25 cup Vegetable Oil
- 2 tbsp Chocolate Chips (optional)

Pre-heat the oven to 375 degrees and grease the muffin pan with oil.

Blend all the ingredients together except the chocolate chips in a blender or food processor. Pour the batter into the muffin tin and top with chocolate chips if you are adding.

Bake in a pre-heated 375 degrees oven for 20 – 25 minutes or until the toothpick inserted in the center and comes out clean.

Allow the muffins to cool completely and serve or store in the fridge for up to 3 days.
