Lemon rice is an excellent recipe for lunch box. It is an easy and quick recipe to make in few minutes if you have white rice handy. Also, Lemon Rice is a wonderful recipe for parties and picnics. My mom makes lemon rice and pack when we are going for the picnics in school and college. Because it stays gentle and light in a tummy during traveling. Even an armature cook can prepare this dish, it never go wrong. Lemon rice goes well with simple hard boiled egg or potato fry, so you can easily make it and pack for the lunch in an early morning before going to work.
Smart Cooking Tips:
1. If the lemons have been refrigerated, heat it slightly in a microwave oven for 20 – 30 seconds approximately and roll it on a hard surface. This helps to squeeze juice from it quickly.
2. The amount of adding lemon juice purely depends on your taste, because I prefer extra lemon sourness in the rice, and my husband prefers mild lemon flavor in the rice.
3. Adding peanuts is purely optional if you are allergic to nuts avoid adding it.
4. Keep all the ingredients closer to you easily available to grab. Because the spices and lentils get burn quickly, so you have to add faster one after another.
5. You can also use store bought lemon juice for this recipe, but I prefer fresh lemon or lime.
6. You can also substitute lemon with lime, lemon tastes subtle compared to lime. So adjust adding the quantity.
7. Avoid start adding lemon juice from the large quantity of rice. First, try with a little amount and gradually increase the rice quantity. Make sure to check for the lemon juice taste and salt and keep adding it accordingly.
8. The yellow color of the rice completely depends on a turmeric powder. If you do not add it, then the rice will be in white color also the turmeric powder gives an excellent taste to the rice.

- 1 cup BASMATI RICE
- 2 tbsp LEMON JUICE RAW
- 1 tsp SALT TABLE
- 1 tbsp OIL
- 0.50 tsp MUSTARD SEEDS
- 0.50 tsp URAD DAL
- 1 tsp CHANNA DAL RAW
- 0.25 tsp HING OR ASAFOETIDA
- 0.50 tsp TURMERIC GROUND
- 0.50 tsp CUMIN SEED
- 2 no RED CHILIES
- 2 no GREEN CHILIES
- 0.25 cup PEANUTS
- 0.50 tsp GINGER GRATED

Cook rice separately and allow it to cool. Leftover rice works best for this recipe.

Gather all the ingredients and keep it closer to you to grab quickly.

In a small pan heat oil add dry red chilies, mustard seeds and allow the mustard seeds to splutter. Add cumin seeds, urad dal and cook until urad dal becomes light brown.

Followed by add channa dal and cook until the color changes into light brown. Add asafoetida and mix well in the oil.

Add chopped ginger, green chilies slit, turmeric powder and mix well in the oil. Add peanuts and cook until peanuts become crunchy. All these processes take only 2 – 3 minutes.

Add the tempered items to the white rice, add lemon juice, salt and check for the taste and add salt accordingly. Garnish with chopped coriander leaves and serve.
