COCONUT RICE – AN EASY LUNCH BOX RECIPE

Coconut rice is an easy and quick dish with only a few ingredients. If you have cooked rice handy, you can easily make coconut rice in 5 mins.

How to cook coconut rice Indian style?

Indian style coconut rice is a simple and flavorful recipe. Grated coconut seasoned with spices and mixed with the white rice. Coconut rice is a traditional South Indian dish. From kids to everyone loves coconut rice. Also, it is an excellent lunch box recipe. You can make coconut rice quickly using the left-over rice. Simple egg fry or potato fry goes well with the coconut rice. Grating the coconut is the time-consuming work in this recipe. But nowadays frozen grated coconut are available in the grocery shops. I always use the frozen grated or shredded coconut in my cooking that reduces the time and effort to half.

Smart Cooking Tips:

1. If you are using frozen grated coconut, make sure to thaw it before start making the coconut.

2. Keep all the ingredients like mustard seeds, urad dal, red chilies, hing, channa dal and curry leaves ready because all these ingredients get cooked in a second and tend to burn quickly.

3. Cook rice separately and allow it to cool before mixing with the coconut. Became hot steamed rice tends to become mushy when mixing. Leftover rice works best for the recipe.

4. I used long grain basmati rice in this recipe; you can use any rice variety of your choice. 5. Adding cashew nuts are optional.

How to cook white rice?

There are various methods to cook white rice. White rice can be cooked using a pressure cooker or rice cooker or using a sauce pan on the stove top. I prefer cooking white rice in a saucepan. Soak a cup of rice for at least 20 minutes. After 20 minutes drain and discard the water from rice thoroughly. In a sauce pan add water, pinch of salt and bring it a boil. When the water starts boiling, add the soaked rice and cook until all the water content absorbed the rice completely. If you are using the white rice in fried rice, spread cooked rice on a plate and allow it to cool completely.

How to serve coconut rice?

Serve coconut rice with egg pepper fry or potato fry.

  • 0.50 cup BASMATI RICE
  • 1 cup WATER
  • 0.25 cup COCONUT SHREDDED
  • 1 tsp OIL
  • 0.25 tsp MUSTARD SEEDS
  • 0.50 tsp URAD DAL
  • 0.50 tsp CHANNA DAL RAW
  • 0.25 tsp HING OR ASAFOETIDA
  • 5 no CURRY LEAVES
  • 2 no RED CHILIES
  • 0.50 tsp SALT TABLE
  • 4 gms CASHEW NUTS RAW
  1. Soak rice for 20 minutes. Boil water in a saucepan with 0.25 tsp of salt. When the water starts boiling add the soaked rice and cook until all the water absorbed by the rice completely. Spread cooked rice on a wide plate and allow it to cool. 

  2. In a separate pan heat, a tsp of oil add mustard seeds and allow it to splutter.

  3. Add urad dal, channa dal, asafoetida, dry red chilies, curry leaves and saute until the urad dal color changes to golden brown and the hing loses its raw smell. Add grated coconut, sprinkle a pinch of salt and saute until the coconut color changes slightly golden brown.

  4. Add the cooked rice and mix well. Check for the salt now and add accordingly.
