Quinoa is a gluten-free seed that is an excellent alternative for wheat and rice. Quinoa is an excellent source of protein, vitamins, and dietary fiber. Quinoa vegetable soup is a healthy and low-calorie soup, made with only fresh vegetables. This soup is an excellent option for dieting people. Quinoa in the vegetable soup make us feel fuller for a long time, so quinoa vegetable soup is a good alternative for a meal. Also, quinoa vegetable soup is a healthy snack in a cold winter days. I made this yesterday since the weather is cold I crave for a hot snack but at the same time I was looking for a healthy option without frying or high-calorie snack. So I started making this simple soup with only fresh vegetables and quinoa without adding oil. Enjoyed the soup in a cold evening without guilt.

Smart Cooking Tips:

1. I used water to cook quinoa and vegetables; you can also use vegetable broth.
2. Rinse the quinoa in cold water thoroughly before start cooking.
3. You can use any vegetables of your choice like cauliflower, spinach, kale, tomatoes and potatoes.

Gluten Free Soup Recipe:

You can easily make this soup into gluten-free by adding vegetables like cauliflower, onion, broccoli, cabbage, celery and green beans and as I mentioned before Quinoa is a gluten-free seed. So you can easily make quinoa vegetable soup. Also, quinoa vegetable soup is a low-calorie soup, it is an excellent soup for dieting people. Sometimes, I make this soup for dinner to replace the high carbs food like rice and wheat. It stays light in the tummy but also a filling soup.

QUINOA VEGETABLE SOUP RECIPE IN 20 MINUTES

Quinoa vegetable soup is a healthy and filling dish in 20 minutes. It is an easy and low-calorie vegetable soup. Also, an excellent replacement for a meal. 

  • 0.25 cup QUINOA UNCOOKED
  • 4 cup WATER
  • 0.50 cup ONIONS CHOPPED
  • 0.25 cup CARROTS CHOPPED
  • 0.25 cup GREEN BEANS CHOPPED
  • 0.50 cup GREEN PEAS
  • 0.25 cup BROCCOLI RAW
  • 0.50 tsp SALT TABLE
  • 0.50 tsp PEPPER BLACK
  1. Rinse quinoa in water thoroughly. Chop the onion, carrot, green beans and broccoli.

  2. In a sauce pan add chopped vegetables, quinoa, water, peas and cook until the water comes to a boil. 

  3. When the water starts boiling, cover the pan with a lid and cook for 15 minutes in a medium flame until the quinoa gets cooked. Reduce the flame and cook until it reaches the desired soup consistency. Add salt and black pepper to a taste and serve.
