Savory cookies (Khara biscuits) are an excellent snack that goes with a cup of tea or coffee. These cookies are mildly sweet, buttery, and flavorful.

KHARA BISCUITS:

Khara biscuits are the popular Indian cookies that you can find in many bakery shops. It tastes less sweet, buttery and flavorful with green chilies, cilantro, cumin seeds and curry leaves. Khara biscuits are easy and simple to bake at home with just a few ingredients. These cookies are an excellent snack that goes well with a cup of tea or coffee and stay good at room temperature for at least 3 days. Khara biscuits are easy to bake for a large crowd and serves as an excellent snack for parties, picnics, and potlucks.

SMART COOKING TIPS:

1. Cream the butter and sugar together without leaving the butter chunks. The butter chunks tend to form lumps in the cookies.

2. Add green chilies according to your taste. Make sure to chop the cilantro and green chilies finely this helps to blend with the flour easily.

3. Add yogurt little by little one tbsp at a time while kneading the dough. The dough should be firm, adding too much yogurt will make the dough soft and sticky.

4. Wheat flour can be replaced with the all purpose flour.

5. Bake until the bottom side of the cookies color changes to golden brown. The top of the cookie remains soft but it gets firm once the cookies are cooled down.

SAVORY COOKIES (KHARA BISCUITS)

Savory cookies (Khara biscuits) are an excellent snack that goes with a cup of tea or coffee. These cookies are mildly sweet, buttery, and flavorful.

  • 2 cup WHEAT FLOUR ((atta))
  • 0.50 cup BUTTER UNSALTED
  • 4 tbsp YOGURT
  • 3 tbsp POWDERED SUGAR ((if you do not have the powdered sugar handy just blend the white granulated sugar to a fine powder in a mixer))
  • 0.50 tsp SALT
  • 0.50 tsp CUMIN SEEDS
  • 2 no GREEN CHILIES
  • 0.25 cup CILANTRO
  • 0.50 tsp BAKING POWDER
  1. Cream the butter and sugar together until smooth. 

  2. Sift wheat flour, baking powder, and salt together. Chop the cilantro and green chilies finely.

  3. Combine both the butter mixture and flour mixture together. Add yogurt little by little, one tbsp at a time and knead a firm dough. Cover and allow the dough to rest for 10 – 15 mins.

  4. After 10 mins, preheat the oven to 350 degrees and line the baking sheet with a parchment paper.

  5. Divide the dough into two to three portions and roll each portion into a flat thick circle and using the cookie cutter cut them into your desired shapes. Arrange on a parchment paper with a 2-inch space between each cookie.

  6. Bake in a preheated 350 degrees oven for 15 – 20 minutes or until the bottom side of the cookies turns golden burn. Avoid baking the cookies for a long time because the cookies will become harder. 

  7. Allow the cookies to cool completely and serve.
