Overcooking the beets tend to lose it’s nutritious. Beetroot rice is one such healthy recipe using the beets. It is easy and simple to make in few minutes. An excellent way to include beetroot in kids diet. Beetroot rice is an excellent lunch box recipe for kids. It is more like a fried rice, so kids can easily consume it using a spoon without making the mess. If you have leftover rice handy, you can make this beetroot in 15 – 20 minutes. Grating beetroot is a time-consuming work in making this rice, a good food processor grates the beetroot in less than a minute and helps in saving lots of time and effort.
Smart Cooking Tips:
1. You can replace the sambar powder with curry powder. Also, avoid adding too much of sambar or curry powder to the beetroot. A just little amount is enough to add flavor and aroma to the beetroot.
2. I used long grain basmati rice in this recipe; you can use any variety of white rice.
3. Avoid overcooking the beetroot, as it loses it’s nutritious quickly.
4. Make sure to cool down the rice before mixing with the beetroot mixture. Because hot steamed rice tends to become mushy when mixing with the beetroot mixture. Leftover rice also works best for this recipe.

BEETROOT RICE – A TASTY BEETROOT RECIPE
Beetroot rice is an easy and quick lunch box recipe for kids with beetroot and rice. It is an excellent way to include beetroot in kids diet.
- 1 cup RICE WHITE
- 350 gms BEETS RAW
- 1 cup ONIONS RAW
- 2 tbsp OIL
- 1 tsp SAMBAR POWDER
- 10 no CURRY LEAVES
- 0.50 tsp CUMIN SEED
- 1.50 cup WATER
- 1 tsp SALT TABLE

Soak basmati rice in water for 20 minutes. In a saucepan add 1.50 cup of water, half a tsp of salt and bring it to a boil. Add soaked rice, cover and cook until the rice get cooked and all the water content absorbed by the rice completely. Spread the rice on a wide plate and allow it to cool.

Peel and grate the beetroot using a vegetable grater or food processor and chop the onion finely.
- In a pan heat oil add cumin seeds, chopped onion, curry leaves and cook until the onion becomes soft.
- Add grated beetroot, half a tsp of salt, sambar powder and mix well. Cook until the beetroot becomes slightly soft (avoid overcooking the beetroot, it tends to lose it’s nutritious quickly).
- Reduce the heat to low, add the cooked rice and mix well. Beetroot rice is ready to be served.
