Kaju katli is a popular Indian sweet that you can find in almost all the sweet shops in India. Kaju katli is also known as kaju barfi and cashew barfi. This sweet is easy to make at home with just a few ingredients. There are varieties of kaju katli based sweet like kaju pista roll, kaju almong katli and kaju milk barfi. Never knew making kaju katli is so easy I tried couple of times before the taste was good but could able to reach the perfection. This time, it just turned out perfect just like the store-bought ones.
Smart Cooking Tips:
1. Powdering the cashews to a fine powder without lumps is an important thing in this recipe. Just pulse the cashews once or twice because cashews ooze out oil when grinding and the oils tend to form lumps. Do not worry if the powdered cashews are slightly grainy.
2. Adding rose water is optional. You can replace the rose water with cardamom powder.
3. Avoid overcooking the cashew and sugar syrup mixture. When it becomes slightly gooey remove the cashew mixture from heat and allow to cool. The cashew mixture will becomes, even more, thicker when cooling.
4. Kneading the cashew mixture to a smooth dough is an important step that helps to make a smooth kaju katlis.
5. You can replace the milk with ghee for a better shelf life.
A high-power blender:
Powdering the cashews to a fine and smooth texture is the only trickiest part in making kaju katlis. As, mentioned before I tried kaju katlis for a couple times though the taste was good but it didn’t turned out soft and smooth. Because the texture of the cashew powder is not as good as this time I just pulse the cashews only one time in my Blendtec for a fine powder. Blendtec is not only excellent for grinding the cashews, you can make almond flour, almond butter, and peanut butter. So using a high-power blender helps you to make a perfect kaju katlis.

- 1 cup CASHEW NUTS RAW
- 0.50 cup SUGARS GRANULATED
- 0.25 cup WATER
- 0.50 tsp ROSE WATER
- 1 tsp MILK

Powder the cashews using a blender (avoid grinding the cashews for a long time just pulse at high speed once or twice because cashews ooze out oil when grinding and forms a lump).

In a pan add sugar, water and bring to a vigorous boiling. Reduce the heat to low, add rose water (optional), powdered cashews and mix well. Cook until the cashew mixture becomes thick but at the same time, it should be slightly gooey consistency.

Allow to cool until warm enough to handle with your hand. Add a tsp of milk and knead a soft and firm dough.

Place the dough on a parchment paper and roll them into a thick circle using a rolling pin. Cut into squares or diamond shapes and serve or store in a refrigerator.
