  1. Pre-heat the oven to 400 degrees. Wash and pat the okras dry using a clean kitchen towel.

  2. Cut the tops off okra and slice lengthwise. Add salt, coriander powder, red chili powder, oil and mix well to coat. 

  3. Grease the baking sheet with oil and arrange okras in a single layer. Bake in a pre-heated 400 degrees oven for 10 mins or until the color starts changing to golden brown.

This is the first green smoothie, I tried it for breakfast. A question was running in the back of my mind whether it would taste good or at least, I would able to finish it without wasting it. I didn’t sip it first, I asked my husband to taste it and his face reaction was ok. So after him, I tasted it, Wow!! I liked it a lot. A smoothie with so much of nutritious tastes sweet without sugar and creamy without milk or yogurt. Thoroughly enjoyed it for breakfast, and I am going to make it for my breakfast for at least twice a week.

 

SIMPLE APPLE KALE SMOOTHIE

A simple apple kale smoothie is a healthy, sugar free, vegan and low calorie breakfast. It is one of the great smoothie for weight loss and dieting.

  • 1 no APPLE

All these ingredients together, makes this smoothie perfect for breakfast. It is also a great refreshing drink. To make it more nutritious, you could also add flax seeds or chia seeds. In this recipe, I used fresh large strawberries, but you can also use frozen strawberries.

PAPAYA MILKSHAKE OR PAPAYA SMOOTHIE

Papaya Milkshake is a cold and refreshing drink to enjoy in summer. Papaya is loaded with nutrition and also helps in digestion. It’s soft texture and sweet taste make a smooth and sweet smoothie. If you do not like Papaya like me, but at the same time you want to include it in your diet because of its rich nutrition profile this smoothie is an excellent way to incorporate it in the diet.

Smart Cooking Tips:

1. Make sure to choose a ripe papaya, because unripe papaya taste bitter, and it will spoil the smoothie taste.

2. Adding Vanilla extract helps to give a nice flavor and aroma to this smoothie. For flavoring, you can also add cardamom powder instead of vanilla extract.

3. Check for the taste of papaya before adding honey or sugar, because papaya itself tastes sweet. If the papaya is not sweet, adjust adding sweetener according to your taste.

4. Adding Ice Cubes are optional, you can also place chopped papaya in the freezer for some time and make a smoothie with frozen papaya.

5. I used whole milk in this recipe; you can also use 2% reduced fat milk.

My little kid like this laddoo, so I used to make it quite often and store it in an airtight container. What else a mommy need, a healthy snack for kid with a good shelf life?

PEANUT FLAX SEED LADOO

Peanut Flaxseed Laddoo is a healthy and yummy snack for kids. Grounded Peanuts, flax seeds, sesame seeds and jaggery together makes a healthy and energetic snack. You could also store these laddoos for up to a week in an airtight container. 

  • 1 cup Peanuts
  • 0.25 cup Flaxseed
  • 1 cup Sesame Seeds
  • 1 cup Jaggery
  1. Dry roast the peanuts separately, until the color changes into golden brown and grind it a fine powder. If you are using the peanuts with skin, dry roast it and discard the peanut skin.

  2. Dry roast the sesame seeds separately, until the color changes into golden brown and grind it a fine powder.

  3. Dry roast the golden flax seed for a second. Blend powdered peanuts, powdered sesame seeds, roasted flax seeds and jaggery powder together, until smooth.

  4. Transfer it to the bowl and form ladoos out of it (if it is difficult for you to form laddoos, just slightly warm up the mixture or mix in the melted warm ghee, this would help you to make perfect laddoos).

Usually, I cook rice varieties or chappati (wheat tortilla)  for my dinner that is high in carbohydrates and ended up in weight gain. I am seriously trying to cut down some pounds, the first thing I heard was to reduce the number of carbs and sugar intake and increase the amount of protein. For first few days, I tried grilled chicken, and slowly I became bored of it and started searching for some interesting and filling low-carb dinner recipe. I found lettuce wraps recipe in Pinterest, looks interesting for me to try it. I am a fond of spices and its flavor, so I wanted to try the spicy chicken lettuce wraps. I made spicy chicken lettuce wraps for dinner two weeks back and my little kid Aldrich looks little disappointed because he is not much interested in spices, though he is ok with mild spice level. So I give a twist to spicy chicken lettuce wraps by adding Chinese sauces like ketchup and sriracha sauce that gives mild sweet and sour flavor to the chicken. It worked well with him, and he finished his dinner with a happy face.

1. Make sure to chop the chicken into small pieces, it helps to blend with the spices and sauces easily, and the chicken will be more flavorful.

2. I used Romaine Lettuce in this recipe; you can also your favorite choices like Iceberg or butterhead.

  • 1 tsp RED CHILI POWDER
  • 0.75 tsp SALT TABLE
  • 1 tsp GINGER GARLIC PASTE
  • 1 tbsp TOMATO KETCHUP
  • 1 tsp SRIRACHA CHILI GARLIC SAUCE
  • 0.25 tsp TURMERIC GROUND
  1. Chop the chicken into small pieces (ground chicken also works well for this recipe).

  2. Wash the romaine lettuce and keep it aside until needed.

  3. In a pan heat oil add chopped onion and cook until it becomes soft. Add turmeric powder and ginger garlic paste. Mix well and cook until ginger garlic paste loses its raw smell.

  4. Add chopped chicken pieces, coriander powder, salt, red chili powder, garam masala powder and mix well. Cover and cook until the chicken gets cooked completely.

  5. Once the chicken is done add tomato ketchup, sriracha sauce and give a good mix. Turn off the heat and allow it to cool.

  6. Place a spoonful of cooked chicken on the lettuce and serve. Garnish it with sliced onion if desired.

6. You can also substitute lemon with lime, lemon tastes subtle compared to lime. So adjust adding the quantity.

7. Avoid start adding lemon juice from the large quantity of rice. First, try with a little amount and gradually increase the rice quantity. Make sure to check for the lemon juice taste and salt and keep adding it accordingly.

8. The yellow color of the rice completely depends on a turmeric powder. If you do not add it, then the rice will be in white color also the turmeric powder gives an excellent taste to the rice.

Lemon rice is a quick and easy Indian vegetarian recipe in 30 minutes for dinner. It is a healthy vegan recipe that stays gentle and light in the tummy. 

  • 1 cup BASMATI RICE
  • 2 tbsp LEMON JUICE RAW
  • 1 tsp SALT TABLE
  • 1 tbsp OIL
  • 0.50 tsp MUSTARD SEEDS
  • 0.50 tsp URAD DAL
  • 1 tsp CHANNA DAL RAW
  • 0.25 tsp HING OR ASAFOETIDA
  • 0.50 tsp TURMERIC GROUND
  • 0.50 tsp CUMIN SEED
  • 2 no RED CHILIES
  • 2 no GREEN CHILIES
  • 0.25 cup PEANUTS
  • 0.50 tsp GINGER GRATED
  1. Cook rice separately and allow it to cool. Leftover rice works best for this recipe.

  2. Gather all the ingredients and keep it closer to you to grab quickly. 

  3. In a small pan heat oil add dry red chilies, mustard seeds and allow the mustard seeds to splutter. Add cumin seeds, urad dal and cook until urad dal becomes light brown.

  4. Followed by add channa dal and cook until the color changes into light brown. Add asafoetida and mix well in the oil.

  5. Add chopped ginger, green chilies slit, turmeric powder and mix well in the oil. Add peanuts and cook until peanuts become crunchy. All these processes take only 2 – 3 minutes.

  6. Add the tempered items to the white rice, add lemon juice, salt and check for the taste and add salt accordingly. Garnish with chopped coriander leaves and serve.

Carrot rice is a quick and easy dinner that can be done with left-over rice. It is a best way to include the healthy Carrot in our everyday diet.

Health Benefits of Carrot:

As we all know Carrot is an excellent source of  Vitamins and Anti-Oxidants. Regular consumption of carrot will help reduce cholesterol and blood sugar regulation. High Antioxidants called beta-carotene helps to prevent cancer.

Carrot is also believed to give skin softer and smoother.

How to make Carrot Rice?

Carrot rice is an easy and simple rice dish. Avoid overcooking the carrot, as soon you add it to the pan, give a quick mix with the onions and spices and turn off the heat. Carrots lose its nutritional values if you cook for a longer time.

Avoid adding too much salt in the carrot mixture. After mixing cooked rice with carrot mixture, check for the salt and add accordingly.

Indian Spices:

I added Curry Powder in this recipe; you can also substitute with Sambar Powder. Add curry powder or sambar powder according to your taste.

How to cook white rice?

White rice can be cooked in many ways like boil and strain method on a stove top, using a rice cooker and pressure cooker.

Add water according to the quality of your rice. I used long grain Royal Basmati rice for making this recipe. So I added 2 cups of water for 1 cup of rice. You can also use other rice varieties like Sona Masoori, etc.

I never used brown rice for this recipe, if you are going to try it, please share your feedback.

  • 10 no CURRY LEAVES
  • 1 tsp CURRY POWDER
  • 1 cup BASMATI RICE
  • 3 tbsp CANOLA OIL
  • 2 no GREEN CHILIES
  1. Cook the rice separately by adding 2 cups of water to 1 cup of long grain rice or according to the package directions and Keep aside.

  2. Heat oil in a pan, add cumin seeds, curry leaves, onion, green chilies and cook until onion becomes soft. 

  3. Add the grated carrot, curry powder, salt and mix well. Add the cooked rice, mix well and serve.

Roasted gram ladoo is easy and simple to make in 5 minutes with only four ingredients. Roasted grams are easy to grind it to a fine powder in seconds using a mixer. Also, this ladoo recipe does not require cooking or baking. I melted ghee in a microwave and add it to the powdered roasted grams and shape them into laddoos. Maa ladoo stays good for up to a week. Also, it serves as an energetic snack for kids. My son Aldrich likes this ladoo, so I often make it for after school snack.

Smart Cooking Tips:

1. You can also dry roast the roasted grams (dalia) for few minutes before powdering it for a nice nutty flavor.
2. Powdering the sugar is important because it blends well with the roasted gram powder and make a soft and smooth ladoos.
3. If you find difficult in shaping ladoos, add extra warm ghee and shape it, or you can also add warm milk if you add milk the laddoos won’t stay good for a week. You have to consume it in 3 days.
4. You can also add chopped nuts and raisins in this ladoo.

  3. Heat ghee in a microwave oven for 40 – 50 seconds and add it to the powdered roasted grams mixture.

  4. Mix well and shape them into the small balls. Serve or store it in an air-tight container for up to a week.

How to make a hard boiled egg?

Hard boiled eggs are easy and simple to make in just a few mins. You can boil eggs in a bulk and store in the refrigerator for a week.Hard boiled eggs are the quickest source of protein that you can consume for breakfast or healthy snack or used in the varieties of recipes salads, sandwiches, curries, and appetizers. Check out the collection of easy and healthy hard boiled egg recipes.

1. In a saucepan, add water, salt, and place the eggs carefully. Bring the water to a vigorous rolling boil and turn off the heat. Cover the saucepan with a tight lid and let the eggs sit in the hot water for 12 – 15 mins.

2. After 15 mins rinse the eggs in a cold water. Crack open the eggs shell and serve or cool the eggs thoroughly and store in a refrigerator.

Smart Cooking Tips:

1. You can add chopped onions, ginger garlic paste and garam masala to the potato mixture.

Traditionally scotch eggs are made with boiled eggs, minced or ground meat and bread crumbs. Boiled eggs wrapped with seasoned minced meat and coated with bread crumbs and deep fried. Egg chops are similar to the scotch egg recipe, using mashed potatoes instead of minced meat. Eggs chops taste so delicious with a crispy outer and hard boiled egg inside.

You can serve egg chops with ketchup or any of you favorite sauce.

EGG CHOPS – SCOTCH EGGS WITH POTATO

Egg chops is an easy and delicious snack with boiled eggs, breadcrumbs and potato. Boiled egg covered with mashed potatoes, coated in bread crumbs and fried.

  • 2 no BOILED EGGS
  • 275 gms POTATO
  • 1 tsp RED CHILI POWDER
  • 1 tsp CORIANDER POWDER
  • 1 tsp SALT TABLE
  • 0.25 cup BREAD CRUMBS
  • 1 no EGG (for outer coating)
  • 0.50 cup OIL
  1. Slice each hard-boiled eggs into a half.

  2. Boil potatoes separately until tender and mash to a smooth texture. Add red chili powder, coriander powder, salt and mix well. 

  3. Beat the egg separately in a small bowl and keep it ready. Spread the bread crumbs on a plate.

  4. Cover the sliced boiled eggs with mashed potato mixture evenly. Dip in the beaten egg and roll in the breadcrumbs until the breadcrumbs get coated evenly.

  5. Shallow fry or deep fry the eggs chops until the color changes to golden brown.
