Gongura is a healthy green leafy vegetable. It is also known as sorrel. It is widely used in Indian Andhra cuisine. Because of its unique sour taste, it is used in many dishes like Gonuga Pappu, Gongura Pachadi, Gongura Pickle, Gongura Mutton, and Gongura chicken are the popular recipes using gongura leaves. You can find gongura leaves in the Indian grocery store.

It is an excellent source of Vitamins, Folic acid, Calcium, Minerals, and Iron.

Gongura shrimp (gongura royyalu) is an easy, flavorful and delicious side dish that goes well with rice and roti. Shrimp cooked with spices and gongura (sorrel) leaves.

  • 1 lb Shrimp
  • 1 bunch Gongura Medium Size
  • 2 no Green Chilies
  • 4 tbsp Oil
  • 1 tsp Red Chili Powder
  • 1 tbsp Coriander Powder
  • 0.50 tsp Turmeric Powder
  • 1 tsp Ginger Garlic Paste
  • 1 tsp Garam Masala
  • 1 tsp Salt (to taste)
  1. Rinse and clean the gongura leaves thoroughly in water. In a pan, heat oil, add gongura leaves, green chilies, and cook until the gongura leaves shrinks. Let it cool and grind to a smooth paste in a blender/mixer.
  2. In a pan, heat oil, add chopped onion and cook until the turns soft.

  3. Add turmeric powder, ginger garlic paste and cook until the ginger garlic paste loses its raw smell.

  4. Add shrimp, red chili powder, coriander powder and cook until the shrimp gets cooked thoroughly. It takes 5 to 6 minutes depending on the size of the shrimp.

  5. Add the grounded gongura paste, garam masala and mix well. Gongura shrimp (Gongura Royyalu) is ready to serve.

Carrot Halwa Recipe with Condensed Milk

Carrot halwa with condensed milk is an easy, quick, and delicious Indian sweet. Grated carrot cooked with ghee, condensed milk, and dry fruits.

Traditionally, carrot halwa is prepared by cooking the grated carrot and milk together for a longer time until the milk becomes thick. It is a delicious Indian sweet, soft cooked carrot with ghee and milk, flavored with cardamom and topped with dry fruits. Carrot halwa with condensed milk is an instant version that tastes equally delicious to the traditional one. It takes only just a few minutes less than half an hour.

  1. Keep stirring the halwa to avoid the getting burned and sticking to the bottom of a pan.
  2. Adding dry fruits are optional but it gives an excellent taste to the halwa.

Carrot halwa with condensed milk is an easy and quick dessert. Grating carrots are a time-consuming task in this recipe. I grated carrots using a food processor it takes only a minute or two. It is an excellent sweet for the parties and potlucks. From kids to everyone loves this sweet. Naturally, carrots are sweeter in taste, so this sweet does not require a larger quantity of sugar. The sweetness of condensed milk is enough.

Carrot Halwa with Condensed Milk

Carrot halwa with condensed milk is an easy, quick, and delicious Indian sweet. Grated carrot cooked with ghee, condensed milk, and dry fruits.

  • 2 Cups Carrot Grated
  • 0.50 no Condensed Milk
  • 2 tbsp Ghee
  • 2 no Cardamom Roughly Crushed
  • 1 tbsp Dry Fruits (I used raisins and dried cranberries, you could any of your favorite)
  1. In a pan, heat ghee, add dry fruits and cook until it becomes soft and plump. Remove the dry fruits from ghee and keep aside for later use. 
  2. Add grated carrots and cook until the carrot becomes soft.

  3. Add condensed milk and cook until the carrot mixture becomes thick (keep stirring to avoid the condensed milk getting burned and sticking to the bottom of a pan).

  4. Add crushed cardamoms, dry fruits and mix well. Carrot halwa is ready to serve.

How to serve Carrot Halwa?

Serve carrot halwa as a dessert or snack.

Green peas carrot potato curry is an easy, healthy and flavorful side dish with spices and coconut. It goes well with the chapati, puri, and dosa.

  • 1 cup Green Peas Dried
  • 1 no Carrot (Large)
  • 2 no Potatoes Medium
  • 1 no Onion Medium
  • 1 tbsp GingerGarlic Paste
  • 0.50 tsp Turmeric Powder
  • 2 no Green Chilies
  • 1 tsp Red Chili Powder
  • 2 tsp Coriander Powder
  • 1 tsp Garam Masala
  • 0.50 cup Shredded Coconut
  • 1 tsp Whole Black Peppers
  • 2 tsp Salt
  • 10 no Curry Leaves
  1. Soak the dried green peas in water for 6 to 8 hours. 
  2. Drain the water from soaked green peas. In a pressure cooker, add soaked green peas, diced potatoes, chopped carrot, water, salt and cook until 8 whistles. Allow the pressure cooker to cool naturally.

  3. Grind the shredded coconut and whole black peppers together in a blender/mixer until smooth.

  4. In a saucepan, heat oil, add chopped onion, green chilies, curry leaves and cook until the onion becomes soft.

  5. Add turmeric powder, ginger garlic paste and cook until the ginger garlic paste loses its raw smell.

  6. Add coriander powder, red chili powder, garam masala and cook until the spices lose its raw smell. If required sprinkle little amount of water and cook to avoid the onion and spices getting burned.

  7. Add the cooked peas, potatoes, and carrot with the water content to the saucepan.

  8. Add the grounded coconut paste and boil the curry until it reaches the desired consistency. Green peas potato carrot curry is ready to serve.

Peanut Chikki Recipe with Sugar

Peanut chikki is an easy and delicious snack with caramelized sugar and peanuts. It is simple to make at home with only 2 ingredients and stays good for a month.

Jaggery is a healthy alternative to sugar. It is an excellent source of antioxidants, iron, and minerals. It gives a delicious and unique taste to the dishes. It is widely used in Indian cuisine.

You can use jaggery in this recipe. Just melt the jaggery like sugar, add crushed peanuts, mix well, transfer to the parchment paper, roll using the rolling pin, and cut them into squares using a sharp knife when it is still warm, bread down into squares and serve or store in an airtight container. Ragi Peanut Ladoo, Sweet Dosa, Unniyappam and Oats Sesame Ladoo are the delicious recipes using jaggery.

  1. Melt the sugar without adding water for a nice crunchy chikki.
  2. Keep the parchment paper, rolling pin and a knife ready because you have to do all the steps like rolling and shaping the chikkis quickly before it is getting cool down. Once it is cooled down it becomes hard and difficult to shape the chikkis.

  1. If the peanut mixture becomes hard, heat it slightly until the mixture becomes soft.
  2. Melt the sugar over a medium heat to avoid the syrup getting burned.

  3. Add crushed peanuts to the sugar syrup and mix well immediately.

Roasting the peanuts is a time-consuming task. You can roast the peanuts in the microwave oven quickly with less effort. Roasted and skinned peanuts are easily available in the grocery store. You can use that too. If you want to roast the peanuts in bulk, you can roast it in the conventional oven.

  1. In a microwave-safe bowl, spread the peanuts in a single layer and roast for 3 to 4 minutes until the peanut skin rip off or until the color changes lightly golden brown. Take out the peanuts every 1-minute interval and give a quick mix.

  5. Transfer the peanut mixture on a parchment paper and roll into flat using a rolling pin. 

  6. Cut them into small squares using a sharp knife when it is still warm, break down into small squares and serve or store in an airtight container.

  • 4 no Eggplants (Brinjal) Small Ones
  • 1 tbsp Coriander Powder
  • 0.50 tbsp Red Chili Powder (to taste)
  • 1 tsp Salt (to taste)
  • 0.50 tsp Turmeric Powder
  • 1 tbsp Rice Flour
  • 1 tsp Ginger Garlic Paste
  • 1 tsp Garam Masala
  • 2 tbsp Oil
  • 1 tsp Lemon Juice
  • 3 – 4 tbsp Water (for marinade)
  1. Wash, cut off the edges and slice them into half inch thickness. 
  2. In a bowl, add red chili powder, coriander powder, turmeric powder, salt, ginger garlic paste, rice flour, lemon juice, garam masala and mix well.

  3. Add water slowly and make a make marinade. The marinade should not be too thick or thin, it should be in a right consistency to coat the eggplants.

  4. Heat oil in the skillet, coat the sliced eggplants in the marinade and place on the skillet with 1-inch space between each slice.

  5. Cook on both the sides over a low to medium heat until the color changes to golden brown. Eggplant fry is ready to serve.

  • 2 cups Rajma (Red Kidney Beans) Cooked and Mashed

  • 2 tbsp Corn flour or All purpose flour (maida)
  • 0.50 cup bread crumbs
  • 1 tsp Garam Masala
  • 2 tsp Coriander Powder
  • 2 tsp Salt (to taste)
  • 1 tsp Red Chili Powder (adjust according to your taste)
  • 1 cup Oil (for deep frying)
  • 1 cup Onion Finely Chopped
  1. Combine all the ingredients together, except oil and mix well. Divide them into small portions and shape them into patties.
  2. Heat oil in a frying pan and deep fry or shallow fry the patties until the color changes and the outer side of the patties becomes crispy. Rajma tikki is ready to serve.
