  1. Use the right amount of ingredients for a light and flaky badushas. If you add more butter or yogurt or baking soda than the quantity I mentioned, either badushas become hard or it just breaks into tiny chunks in the oil when frying.

  1. Deep fry the badusha over a low heat until golden brown. It helps the badushas get cooked evenly on all the sides.

  1. If the sugar syrup becomes too thick or crystalize, add little amount of water to the syrup and bring to a boil. Keep the badushas soaked in the sugar syrup for at least 2 mins. Keep turning the badushas in the sugar syrup, so that it will get coated by the sugar syrup on all the sides.

  1. Make sure to make a dent in the center the pressure helps to cook the badushas inside thoroughly. You will notice the cracks in the dough when shaping that is perfectly fine.

Badusha is a popular Indian sweet, easy and simple to make at home. It tastes buttery and flaky, a delicious dessert for special occasions.

  • 1 cup All purpose flour (maida)
  • 0.25 cup Butter Unsalted Melted
  • 2 tbsp Yogurt
  • 1 pinch Salt
  • 1 pinch Baking Soda
  • 1 cup Oil (for deep frying)
  • 0.50 cup Sugar
  • 0.50 tsp Lemon Juice
  • 2 no Green Cardamom
  • 0.50 cup Water
  • 1 pinch Saffron
  1. In a wide bowl, sift all purpose flour (maida), baking soda and salt together.
  2. Add melted butter, yogurt, and mix well. It should be in a crumbly texture. Add water slowly and knead a soft dough. Cover and rest the dough for 15 to 20 minutes.

  3. For sugar syrup: In a small saucepan, add sugar, water, saffron, and boil until the sugar gets dissolved completely and the syrup becomes slightly sticky. Turn off the heat, add freshly crushed cardamom or cardamom powder, lemon juice and mix well. Sugar syrup is ready now.

  4. If the sugar syrup becomes too thick or crystalize, add little amount of water and again boil the syrup for a few seconds.

  5. Divide the dough into small equal sized balls and roll in between your palms until smooth and press gently to a flat circle and make a  dent in the center using your thumb as I shown in the picture.

  6. In a hot oil, deep fry the badushas until golden brown over a low heat and spread on the paper towel to absorb the excess oil.

  7. Drop the badusha in the hot sugar syrup and soak for at least 2 minutes. Keep turning the badushas when soaking in the sugar syrup this helps to coat the sugar syrup on all the sides.

  8. Remove the badusha from sugar syrup and garnish with the chopped nuts (optional). Let it cool and serve after a couple of hours for a nice flaky and flavorful sweet.

Serve badusha as a dessert or snack. After sometime, the sugar syrup on the badusha starts to crystalize. So warm the badusha for a few seconds before serving.

  • 0.50 tsp Salt
  • 2 tbsp Coriander Leaves Chopped
  • 0.50 tsp Cumin Seeds
  • 1 no Green Chili
  • 1 cup Oil (for frying goli bajji)
  • 2 tbsp Onion finely chopped
  1. In a bowl, add all-purpose flour (maida), rice flour, yogurt, chopped onion, green chilies, baking soda, salt, cumin seeds, chopped cilantro, grated ginger and mix well.
  2. Add water little by little and make a smooth batter without any lumps.

  3. In a hot oil, drop the batter little by little and deep fry until golden brown. Goli bajji is ready to serve.

Ragi Ladoo with Jaggery

Ragi ladoo is a healthy and energetic snack recipe with ragi roti, peanuts, and jaggery. Kids would love this ladoo, excellent snack option for picnics and road trips.

How to roast peanuts in the oven?

Roasting peanuts and removing the skin is the time-consuming task. Roasted peanuts are easily available in the grocery stores. If you have raw peanuts, you can roast in the conventional oven or microwave oven or on the stovetop using a skillet.

  1. Preheat the oven to 350 degrees oven. Spread the raw peanuts on a baking sheet in a single layer and bake for 15 to 20 minutes or until slightly crispy in a preheated 350 degrees oven. Take out the peanuts from oven and stir after 7 minutes. Allow to cool and rub peanuts together in your hands and blow off the peanut skin and use in the recipes or store in an airtight container for a month.

Continue cooking and stirring every two minutes until the color changes to a golden brown. Allow the peanuts to cool and rub peanuts together in your hands and blow off the peanut skin and use in the recipes or store in an airtight container.

  • 2 Cups Roasted and Skinned Peanuts
  • 1 Cup Ragi Flour
  • 2 Cups Jaggery Powder
  • 0.50 cup Water or as required to knead the ragi flour
  1. For ragi roti: In a bowl, add ragi flour, water and knead a soft and firm dough. Divide the dough into two portions and place one portion on the skillet and press into a flat circle using the fingers. 
  2. Cook on both the sides until the color changes. Repeat the same thing with the remaining dough. Allow the ragi roti to cool and chop into small pieces.

  3. In a blender, blend ragi roti pieces, jaggery powder and roasted peanuts together to a coarse powder.

  4. Divide them into small portions and roll into small ladoos and serve or store in an airtight container.

FRENCH TOAST ROLL UPS WITH CHOCOLATE FILLING

French toast roll ups with chocolate is an easy and sweet breakfast made by stuffing the bread with melted chocolate and flavored with cinnamon sugar.

Stuffed french toast made by filling the bread slice with your favorite fillings like cream cheese, strawberries, Nutella, chopped banana and jams. Roll the bread slice into cylindrical shape and dip in beaten egg, sugar, vanilla extract and milk mixture and toast on a skillet with butter until golden brown.

If you like that filling make sure to melt the chocolate chips in a microwave by heating for 40 to 60 seconds or until the chocolate chips get melt down completely. Take out the chocolate chips from the oven at every 10 – 20 seconds interval and mix well, overheating the chocolate chips end in a hard and unsmooth melted chocolate.

  • 6 no WHITE BREAD
  • 1 no EGG
  • 3 tbsp MILK
  • 0.50 tsp VANILLA EXTRACT
  • 2 tbsp SUGARS GRANULATED
  • 0.50 cup SEMI SWEET CHOCOLATE CHIPS
  • 10 gms CASHEW NUTS CHOPPED
  • 2 tbsp SUGARS GRANULATED
  • 0.50 tsp CINNAMON POWDER
  • 2 tsp UNSALTED BUTTER
  1. In a bowl beat egg, milk, sugar and vanilla extract together. Cinnamon Sugar: Mix 2 tbsp of sugar and 1/2 tsp of cinnamon powder together. Keep it aside until needed.
  2. Cut the crusts from bread slices and flatten each bread with a rolling pin.

  3. For chocolate filling: In a microwave safe bowl add chocolate chips and melt in a microwave oven by heating the chocolate chips for 40 – 60 seconds or until the chocolate chips get melt completely. Take out the chocolate chips from the microwave oven at every 10 – 20 seconds interval and mix well. You can choose your favorite fillings like cream cheese, strawberries, jams, and Nutella.

  4. Spread the melted chocolate on a slice of flattened bread and sprinkle chopped cashew nuts and roll gently. Repeat the same for the rest of the bread slices.

  5. Heat a skillet and grease butter over a medium heat to coat inside of the skillet. Dip each bread roll in egg mixture and place on the skillet and toast on all the sides until the color changes into golden brown.

  6. Roll the french toast rolls on the cinnamon sugar when it is warm and serve.
