Potato broccoli patties with cheese is an easy and healthy snack for kids. You can even serve these patties as an appetizer or in between the burger buns.

Potato broccoli cheese patties taste good with burger buns. You can even fill this smashed potato broccoli cheese mixture in between the bread slices and serve as a sandwich. Potatoes, broccoli, and cheese together make a delicious combo. Also, the breadcrumbs give a nice crunchy texture to these patties. If you are making these patties in a large quantity, you can bake these patties in an oven instead of roasting.

Smart Cooking Tips:

1. Boil the potatoes until tender and remove from the boiling water immediately. If it sits in the hot water for a long time after cooking, then the patties tend to fall apart when cooking. You can even steam the potatoes instead of boiling.

2. Avoid overcooking the broccoli, it should be slightly crunchy.

3. You can use other spices like garlic, paprika in these patties.

4. If you find difficult to bind and shape the patties. Add egg, mix well and make patties.

5. You can use any variety of bread crumbs in this recipe; panko breadcrumbs give a nice crunchy texture to the patties.

Potato Broccoli cheese patties is a healthy snack for kids. These patties include potatoes, broccoli, and cheese that keeps the kids fuller and energetic for a long time. Kids would love these patties; it tastes crunchy on the outside and soft inside. You can even serve these patties in between the burger buns for a filling meal. I usually make patties and refrigerate it. In the morning, I just pull out the patties out from the refrigerator and coat with bread crumbs and roast in the pan and pack the kid’s lunch box. POTATO BROCCOLI PATTIES WITH CHEESE

Potato broccoli patties with cheese is an easy and healthy snack for kids. You can even serve these patties as an appetizer or in between the burger buns.  

  • 7 oz POTATO
  • 4 oz BROCCOLI RAW
  • 0.50 cup CHEDDAR CHEESE
  • 3 tbsp BREAD CRUMBS
  • 0.50 tsp SALT TABLE
  • 0.25 tsp PEPPER BLACK
  • 5 tbsp BREAD CRUMBS
  • 1 tbsp OIL
  • 1 tbsp ONION CHOPPED
  1. Peel and chop the potato roughly. Boil or steam the potato until soft and mash it to a smooth texture using a fork or potato masher.

  2. Boil or steam the broccoli florets until slightly tender. Chop the broccoli florets finely.

  3. In a bowl add mashed potato, chopped broccoli florets, shredded cheddar cheese, chopped onion, salt, pepper powder, three tbsp of bread crumbs and mix well.

  4. Divide them into small patties. Spread the remaining five tbsp of bread crumbs on the wide plate.

  5. Roll the patties in the bread crumbs. Heat a tbsp of oil in a skillet and swirl to coat the pan.

  6. Place patties in the skillet and cook on both the sides until the color changes into golden brown.

How to make dry fruit ladoo?

Dry fruit ladoo is a popular Indian sweet with dry fruits like dates, raisins, fig and chopped nuts. Traditionally, dry fruit ladoo is made by sauteing the dry fruits in ghee and blending with chopped nuts. I used Medjool dates in this recipe that is soft and easy to grind without soaking and sauteing in ghee. Additionally, oats and chia seeds add extra nutrition to the ladoos. Smart Cooking Tips:

1. I used Medjool dates in this recipe, you can use any variety if you find difficult to grind saute the dates in ghee until it becomes soft.

2. Dates are the sweetening and binding agent in this recipe. So add according to your taste.

3. You can add other dry fruits like raisins, apricots, and fig in this recipe.

Dry fruit ladoo is an easy and healthy snack with oats, dates, almonds and chia seeds. It is simple to make in just a few mins.

  • 12 no Medjool Dates
  • 1 cup Oats
  • 30 no Roasted Almonds
  • 2 tbsp Chia Seeds
  1. Dry roast the oats over a medium flame for 5 to 6 minutes until nice nutty aroma comes out.

  2. In a blender or food processor, grind the oats and almonds coarsely. 

  3. Add chia seeds, pitted dates and blend again until the dates blended to a smooth paste. Transfer to a bowl and knead to a smooth dough. Divide into small portions and shape them into small balls. Dry fruit ladoo is ready to serve.

DATE SHAKE WITH MEDJOOL DATES AND ALMOND FLOUR Date shake is a sweet, energetic and delicious drink with dates. It is easy and simple to make at home in 2 minutes.

Dates are sweet and healthy fruit, an excellent source of dietary fiber, potassium, and copper. You can make a wide variety of recipes using dates like date nut ladoos, date walnut bread, banana oatmeal date smoothie and oatmeal banana cookies. Dates give an excellent sweet taste to the dishes naturally. Medjool dates are my favorite that taste so soft, sweet and flavorful. Because of its soft texture Medjool blends with the milk and flour thoroughly, you can blend Medjool dates to a fine paste using a food processor or blender without soaking or cooking.

Smart Cooking Tips:

1. I used Medjool dates in this shake, the soft texture of the Medjool dates help to make a smooth and creamy milkshake.

2. You can replace the whole milk with 2% reduced fat-free milk.

You can make a smooth and creamy milkshake using a high powder blender “Blendtec”. Blendtec is one of my favorite kitchen tool that blends the frozen fruits, fresh fruits, vegetables, nuts and seeds in just a few seconds. Guacamole is an easy and healthy side made with avocado, fresh vegetables, and herbs. It is a quick dip that we can make it in 5 minutes without cooking. The one task that takes little time and effort in making guacamole is chopping the vegetables. Since avocado is a soft and smooth green vegetable, you can easily mash it using a fork. Fresh herbs like cilantro and garlic give an excellent flavor to the guacamole. Lemon or lime juice helps to protect the green color from avocado without browning. Also, it gives a mildly sour taste to the guacamole dip.

Smart Cooking Tips:

1. As soon as you scoop out the avocado flesh from the peel, immediately add Lemon juice. It helps to retain the beautiful green color of avocado without browning.

2. Chop the onion and tomatoes finely. Finely chopped vegetables blend well the mashed avocado.

3. Adding serrano peppers is optional. You can also replace serrano peppers with green chilies; it gives a spicy taste to the guacamole. Make sure to deseed the serrano peppers for a mildly spicy taste.

4. You can also add spices like freshly ground cumin and black pepper in guacamole.

5. Serve guacamole fresh, if you are refrigerating for later use store it in an airtight container. Air tight containers prevent the air flow and keep the guacamole fresh without browning.

6. Guacamole tastes good if it is little chunky compared to a smooth texture. So avoid mashing avocado to a smooth puree.

  2. Cut the avocado into a half using a knife and remove the seed using a spoon. Scoop out the avocado flesh from the peel using a spoon and put it in the medium bowl.

  3. Add lemon or lime juice and mash avocado using a fork roughly, it should be little chunky.

  4. Add chopped onion, chopped serrano peppers, cilantro, garlic, salt and mix well. Add chopped tomato and mix gently. Serve or refrigerate it for the later use in an air tight container.

There are varieties of burfi recipe like coconut barfi, besan burfi, peanut burfi, cashew nut barfi, almond barfi and walnut burfi. Peanut barfi is a popular Indian snack that you can find in almost all the Indian shops. Traditionally, peanut barfi is made with peanuts and jaggery. Peanut and jaggery together makes a healthy and energetic snack. Especially, for growing kids, it is an excellent snack option that keeps them fuller and energetic for a longer time. This peanut burfi tastes soft and brittle so even young kids can enjoy this burfi. The best part about this peanut burfi is you can make in less time and store for up to 15 days. It is an excellent snack option to make in the kids summer holidays and for picnics. My son Aldrich loves this burfi, so I make peanut burfi often. Smart Cooking Tips:

1. You can replace the jaggery with sugar. But jaggery gives an excellent taste to the burfi.

2. Make sure to filter the jaggery syrup using a cheese or muslin cloth. This helps to remove the impurities from the jaggery.

3. Shape the burfi when the peanut and jaggery mixture are still warm. Because jaggery tends to become hard once it gets cooled down.

4. Use a flavorless and odorless oil like vegetable or canola oil for greasing the plate, you can also use ghee or butter.

PEANUT CHIKKI – PEANUT BURFI – A HEALTHY SWEET

Peanut burfi is an easy and healthy kids friendly snack with peanuts and jaggery. You can make this snack in bulk and store for up to 15 days.

  • 2 cup Peanuts
  • 1.50 cup Jaggery
  • 0.25 cup Water
  • 1 tsp Oil
  1. Roast the peanuts over a medium flame until crispy and powder them coarsely using a blender. Grease a wide plate with oil or ghee or butter.

  2. In a sauce pan add jaggery, water and cook until the jaggery melts down completely. Filter the jaggery syrup using a cheese or muslin cloth to remove all the impurities.

  3. In the same saucepan add the filtered jaggery syrup and bring to a rolling boil. Add powdered peanuts and cook until the peanut and jaggery mixture becomes slightly thick. Turn off the heat and spread the peanut jaggery mixture on a greased plate and allow to cool.

  4. When it is still warm cut them into the desired shapes and serve or store in a refrigerator for up to 15 days.

Egg bonda (Egg bhaji) is an easy and simple snack with hard boiled egg and chickpea flour. It is easy to prepare in just 30 mins.

How to prepare egg bonda?

Traditionally, egg bonda is a deep fried snack with hard boiled egg and seasoned chickpea flour. It is a popular Indian street food that you can find in many roadside restaurants in India. It is also known as egg bhaji, egg pakora, muttai bonda and ande bhaji. I prepared this egg bonda in the paniyaram pan using a few drops of oil instead of deep frying. I didn’t even notice the difference between the deep fried egg bhaji and the one I made in the paniyaram pan using only a few drops of oil. I enjoyed this guilt-free and protein packed snack with a cup of tea yesterday evening. My son Aldrich too loved it.

Smart Cooking Tips:

1. You can add finely chopped onion, green chilies, coriander leaves and ginger garlic paste in the batter.

2. The chickpea (besan) flour batter should be slightly thick and flowing consistency. If the batter is thin then it won’t coat the eggs properly.

3. Cook egg bonda over a medium flame in the appe pan. If you are deep frying the egg bonda, pierce the hard boiled eggs roughly using a fork before dipping in the batter. This helps to avoid the eggs getting burst while deep frying.

As we all know hard boiled eggs are the quickest source of protein. Hard boiled eggs are easy to make and stays good in a fridge for up to seven days. You can serve as it is for a breakfast or snack and can use in the varieties of recipes from salads to appetizers. Egg bonda is an excellent snack using the hard boiled eggs. Hard boiled eggs coated with the seasoned chickpea flour batter and deep fried. This healthy version of egg bonda using the paniyaram pan helps us to enjoy this protein packed snack without indulging the fat from the oil.   • 4 no Hard boiled eggs
  • 1 cup Chickpea Flour (besan)
  • 0.25 cup Rice Flour
  • 1 tsp Red Chili Flour
  • 0.25 tsp Turmeric Powder
  • 1 pinch Asafoetida
  • 1 tsp Salt
  • 1 tbsp Oil
  1. Cut each hard-boiled egg in the half. 

  2. In a bowl add chickpea flour, red chili powder, turmeric powder, salt, asafoetida and mix well. Add water slowly and make a smooth batter. The batter should be slightly thick but flowing consistency.

  3. Heat few drops of oil in each mold in the paniyaram pan. Dip each egg piece in the batter using a slotted spoon and place in the molds. Cook on both the sides until the batter is cooked.

Broccoli paneer paratha is loaded with broccoli and paneer together make yummy parathas. Kids would love this paneer flavored paratha.

Broccoli paneer paratha is loaded with broccoli and paneer together makes yummy parathas. Kids would love this cheese flavored paratha. 

  • 3 cup BROCCOLI
  • 1 cup ONION CHOPPED
  • 3 tbsp CANOLA OIL
  • 1 tsp RED CHILI POWDER
  • 2 cup WHEAT FLOUR
  • 1 tsp SALT TABLE
  • 0.50 cup PANEER
  1. Wash and chop the broccoli finely. You can also chop using the food processor.

  2. Heat oil in a pan, add the chopped onion and cook until the onion becomes soft. Add the chopped broccoli, salt, red chili powder and cook for 3 – 4 minutes. Add the grated paneer and turn off the heat. Allow to cool.

  3. In the meantime, you could start preparing for the parathas. In a bowl add wheat flour, salt and mix well.

  4. Add the enough amount of water and knead a soft dough. Cover the dough and set aside for 20 minutes. Divide the dough into small portions and roll it into flat circles.

  5. Place the broccoli mixture in center and seal the edges. Roll it again gently into the flat circle.

  6. In a hot skillet place the parathas one by one and cook on both the sides until the color changes into golden brown.
