Egg fried rice is easy, and quick one pot dish loaded with vegetables and egg. It is a simple and quick lunch box recipe. If you have leftover rice, it is simple to make in just a few mins.

  • 2 no EGGS
  • 1 cup CARROT CHOPPED
  • 2 cup CABBAGE CHOPPED
  • 0.50 cup SWEET PEAS
  • 0.50 cup ONIONS CHOPPED
  • 0.50 tbsp SOY SAUCE
  • 1 cup BASMATI RICE
  • 0.25 tsp PEPPER BLACK POWDER
  • 0.50 cup GREEN BEANS
  • 3 tbsp CANOLA OIL
  • 1 tsp GARLIC CHOPPED
  1. Wash and soak the rice for rice 20 minutes. In a large pan add water, salt and oil allow it to boil. Add soaked rice and cook until the rice becomes soft (the rice should not be too soft). Drain the excess water and allow it to cool. 

  2. In a pan heat oil add chopped garlic and cook until nice aroma comes out. Add onion and cook until it becomes soft.

  3. Add Carrot, Beans and cook until half done. Add the cabbage and peas and cook until it gets cooked (Avoid overcooking the veggies it should be little crunchy for this recipe).

  4. Move the vegetables to one side of the pan and make a space for eggs. Add eggs, salt, and pepper. Mix well and cook until it gets cooked thoroughly.

  5. Add the cooked rice and soy sauce. Mix well and garnish it with spring onion.

How to serve egg fried rice?

Serve egg fried rice as it is or with Chicken Manchurian or with Fish Manchurian.

Chutney is a traditional South Indian breakfast recipe that serves with Idli and Dosa. There are varieties of Chutney recipes like tomato chutney, onion chutney, peanut chutney and mint chutney.

Beetroot chutney is a healthy and simple chutney recipe with beetroot. It is an excellent way to include beetroot in the diet. Beetroot and Coconut together makes a delicious dessert.

Smart Cooking Tips:

1. You can grate the beetroot, grated beetroot gets cooked faster.

2. You can add tamarind paste or raw tamarind for a tangy taste.

Healthy Beetroot Recipes:

Beetroot is a healthy purple vegetable that is an excellent source of vitamin c, dietary fiber, magnesium, iron, and copper. Beet fiber helps to reduce cholesterol and supports heart health.

You can make varieties of recipes using beetroot, beetroot rice, beetroot juice and beetroot stir fry. This beetroot chutney is a delicious recipe with the beets. I mix this beetroot with the white rice and serve as a lunch or dinner with egg stir fry or potato fry.

Easy Beetroot Chutney

Beetroot Chutney is a healthy and easy side dish with beetroot and coconut. A delicious side for Idli, Dosa, and Rice.

  • 2 cups Beetroot
  • 1 cup Coconut Shredded
  • 0.25 cup Chana Dal
  • 2 tbsp Urad Dal
  • 2 tbsp Oil + 1 tsp for tempering
  • 6 no Dry Red Chilies
  • 0.50 tsp Mustard Seeds
  • 1 tsp Urad Dal
  • 1 pinch Asafoetida (Hing)
  1. In a pan, heat oil, add dry red chilies, chana dal, urad dal and roast until the color changes to golden brown.

  2. Add chopped beetroot and cook until the beetroot becomes soft. Add shredded coconut, mix well and allow to cool.

  3. Add salt and grind to a smooth paste by adding water little by little using a blender.

  4. For tempering the chutney: In a small saucepan, heat a tsp of oil, add mustard seeds and allow to splutter. Add urad dal and saute until the color changes to golden brown. Add asafoetida (Hing) and mix well.

  5. Add the tempered items to the chutney, mix well and serve.

How to Serve Beetroot Chutney?

Serve beetroot chutney with idly, dosa and rice.

Mint Chutney For Dosa

Mint chutney is an easy and healthy side dish that goes well with Dosa. Fresh mint leaves, onion, and red chilies together make a delicious chutney.

  • 1 cup Mint Leaves
  • 1 cup Onion Chopped
  • 3 no Dry Red Chilies
  • 1 tbsp Oil
  • 0.50 tsp Tamarind Paste or 1 inch piece of raw tamarind
  • 0.25 cup Coconut
  1. In a pan, heat oil, add chopped onion, red chilies and cook until the onion becomes soft (If you are using raw tamarind, add it now).

  2. Add mint leaves and saute until the mint leaves become soft. Turn off the heat, add the shredded coconut, mix well and allow to cool.

  3. In a blender, add the cooked onion mint leaves mixture, tamarind paste, salt and blend to a smooth paste. Mint chutney is ready to be served.

 

How to serve mint chutney?

Serve mint chutney with Dosa, Idli, and Medu Vada.

Sandwiches are the excellent meal for the kids. You can serve sandwich for breakfast or as a filling snack or pack in a lunch box. Sandwiches are an excellent lunch box recipe for kids, it is easy and simple to make in just a few mins in the busy mornings. You can go creative in preparing the fillings according to your kid’s taste. These 10 sandwiches are my son Aldrich’s favorite. I pack the sandwich for his lunch at least twice in a week.

1. Potato Masala Sandwich:

RAJMA PULAO – EASY KIDNEY BEAN RECIPES

Rajma pulao is a healthy and flavorful one pot meals recipe with kidney beans, spices, and rice. Rajma pulao is an easy and healthy kids-friendly rice dish.

An Easy Red Kidney Bean Recipe:

Kidney beans are an excellent source of fiber that helps in lowering the cholesterol and prevent raising the blood sugar level rapidly after a meal. Also, Kidney beans are rich in Iron that helps to prevent Iron deficiency. Particularly for vegetarians and vegans kidney beans are the good source of iron. Rajma Pulao is one such delicious recipe to include kidney beans in the diet. Rajma Pulao is a flavorful rice dish; even kids would love this pulao.

Smart Cooking Tips:

1. I used dried rajma beans in this pulao. So I soaked kidney beans in water for overnight and cook until beans become soft. You can also use canned kidney beans for a quick pulao.

2. Soak white rice in cold water for at least half an hour before cooking. This helps to make a soft and fluffy rice.

3. If you are cooking, the kidney beans using a pressure cooker reserve the liquid content with kidney beans to cook the rice.

4. I used long grain basmati rice in this pulao, so I used three cups of water to 2 cups of rice. The amount of water used to cook the rice depends on the quality of the rice. So add water according to the package directions.

5. You can also use thin coconut milk in this pulao, coconut milk gives an excellent flavor to the pulao.

6. Make sure to measure and add a cup of water to cook the half a cup of kidney beans in a pressure cooker.

Easy Lunch Box Recipe For Kids:

Rajma Pulao is easy and filling lunch box recipe for kids. My son Aldrich loves this red kidney beans pulao, so I pack rajma pulao with yogurt for his lunch. Rajma Pulao with yogurt is an easy and healthy combo for kids. I soak kidney beans before going to bed and cook in the morning using a pressure cooker. Sometimes I use canned kidney beans also for a quick pulao. Apart from soaking time rajma pulao is easy and simple to make in an hour. If you are using canned kidney beans, this pulao is easy to make in 45 minutes.

RAJMA PULAO – EASY KIDNEY BEAN RECIPES

Rajma pulao is a healthy and flavorful one pot meals recipe with kidney beans, spices and rice. Rajma pulao is an easy and healthy kids-friendly rice dish. 

  • 0.50 cup RED KIDNEY BEANS (RAJMA)
  • 2 cup BASMATI RICE
  • 1 cup ONION CHOPPED
  • 3 tbsp OIL
  • 1 tsp CUMIN SEED
  • 4 gms CINNAMON
  • 2 gms CLOVES
  • 1 no BAY LEAF
  • 2 tsp GINGER GARLIC PASTE
  • 0.25 tsp TURMERIC GROUND
  • 1 tsp CORIANDER POWDER
  • 2 no ROMA TOMATO
  • 2.50 cup WATER
  • 1 tsp SALT TABLE
  • 0.25 cup MINT LEAVES
  • 0.25 cup CILANTRO (CORIANDER)LEAVES CHOPPED
  • 1 tsp RED CHILI POWDER
  • 2 no GREEN CHILIES
  • 1 cup WATER
  1. Soak kidney beans in water for over night. After 8 hours drain and discard the water from kidney beans and add a cup of fresh water and cook up to 4 whistles. Turn off the heat and allow the pressure cooker to cool naturally.

  2. Open the pressure cooker and reserve the cooked kidney beans with the liquid. Drain the liquid from cooked kidney beans and keep it aside until needed.

  3. Soak basmati rice for at least half an hour before cooking. 

  4. In a saucepan, heat oil add the cumin seeds, bay leaf, cinnamon stick, cloves, cardamom and saute until the nice aroma comes out. Add sliced onion, green chilies and cook until onion becomes soft.

  5. Add ginger garlic paste, mix well and cook until it loses its raw smell. 

  6. Add chopped tomatoes and cook until it becomes soft and mushy. Add salt, turmeric powder, coriander powder, red chili powder and mix well. Cook until the spices lose its raw smell.

  7. Add mint leaves, coriander leaves, cooked kidney beans and mix well.

  8. Add soaked rice and saute for 10 – 20 seconds. Add 2.50 cup of water and 0.50 cup of reserved liquid from kidney beans. Bring it to a boil and check for the salt.

  9. When its starts boiling cover the pan with a lid and cook until all the water content absorbed the rice completely. Open the lid and mix the rice gently using a spatula. Rajma pulao is ready to be served.

 

How to serve rajma pulao?

Serve rajma pulao as it is or with yogurt raita or egg pepper fry.

Grated bottle gourd mix with the rice thoroughly and your kids don’t even notice the bottle gourd in the pulao.

1. You can grate the bottle gourd finely and add to the pulao. This way you can easily include bottle gourd in the picky eater’s diet.

Bottle Gourd Rice (Lauki Pulao)

Bottle gourd rice (Lauki Pulao) is an easy and flavorful one pot meal. An excellent way to include bottle gourd in the diet.

  • 1 no Bottle Gourd (Lauki) Medium Size
  • 1 cup Onion Chopped
  • 2 no Tomatoes
  • 2 tbsp Oil
  • 1 tsp Cumin Seeds
  • 1 tbsp Ginger Garlic Paste
  • 0.25 tsp Turmeric Powder
  • 0.50 tbsp Red Chili Powder
  • 1 tbsp Coriander Powder
  • 1 tsp Garam Masala
  • 0.25 cup Mint Leaves
  • 0.50 cup Coriander Leaves Chopped
  • 2 cups Basmati Rice
  • 4 cups Water
  • 2 tsp Salt (to taste)
  1. Rinse and soak the rice in water for 20 minutes. Peel the skin of a bottle gourd, chop into small pieces and discard the seeds.

  2. In a saucepan, heat oil, add chopped onion and cook until the onion becomes soft. 

  3. Add turmeric powder, ginger garlic paste and saute until the ginger garlic paste loses its raw smell.

  4. Add chopped tomatoes and cook until the tomatoes become soft and mushy. Add red chili powder, coriander powder, salt, garam masala and mix well. Sprinkle little amount of water and cook until the spices lose its raw smell.

  5. Add chopped lauki, mint leaves, chopped coriander leaves and mix well. 

  6. Add the soaked rice and mix well. Add water and bring to a boil. Check for the right amount of salt at this time and add accordingly.

  7. When the water starts boiling, cover the pan with a lid and cook until the water gets absorbed by the rice completely. Garnish with the chopped coriander leaves, mix gently with a spatula and serve.

 

How to serve bottle gourd rice?

Serve bottle gourd rice with onion raita and egg pepper fry.
