- 3 no Hard Boiled Eggs
- 2 tbsp All Purpose Flour (maida)
- 2 tbsp Corn Flour
- 0.25 tsp Salt (to taste)
- 1 pinch Black Pepper Powder
- 1 cup Oil (for deep frying)
- 1 tbsp Oil
- 0.50 tsp Garlic Chopped Finely
- 0.50 tsp Ginger Chopped Finely
- 0.50 cup Onion Chopped
- 0.25 cup Capsicum Chopped
- 2 tbsp Tomato Sauce
- 1 tbsp Red Chili Sauce
- 0.50 tbsp Soy Sauce
- 1 tbsp Spring Onion Chopped
- Slice each egg into four slices.

In a bowl, add all purpose flour, corn flour, salt, pepper powder, and mix well. Add water gradually and make a smooth batter without any lumps.

Dip the egg slices in the batter and place in the hot oil gently and deep fry over a medium heat until the outer coating turns crispy.

For the sauce: In a separate saucepan, heat oil, add finely chopped garlic and ginger and saute until the garlic color changes to golden brown.

Add chopped onion, bell pepper, and cook until the veggies become soft.

Add soy sauce, red chili sauce, tomato sauce and mix well. When the sauce starts boiling add the fried eggs and mix well. Cover and cook for 4 to 5 minutes over a low heat, garnish with spring onion and serve.
