Bread loaf is always in grocery list having a loaf of bread helps me to avoid eating out. Whenever I feel tired or bored to cook, I just make simple sandwiches like Bombay sandwich with fresh vegetables, grilled cheese sandwich, potato sandwich or avocado boiled egg sandwich for a quick and filling lunch or dinner. Bread upma is an easy and quick recipe using the bread. Adding eggs in the bread upma helps to add an additional flavor, nutrition, and protein to the dish.

Smart Cooking Tips:

1. Cook the eggs and tomato mixture thoroughly before adding the bread pieces. Otherwise, bread will become soggy.

2. You can slightly toast the bread pieces in a butter or ghee or oil before adding it to the tomato mixture this helps to give a crispy texture to the bread.

  • 3 no BREAD SLICES (White or Whole Grain)
  • 1 cup ONIONS RAW
  • 2 no ROMA TOMATO
  • 2 tbsp OIL
  • 1 tsp SALT TABLE
  • 1 tsp PEPPER RED OR CAYENNE
  • 2 no EGG WHL RAW FRSH
  • 0.25 tsp MUSTARD SEEDS
  • 0.50 tsp URAD DAL
  • 5 no CURRY LEAVES
  • 2 tbsp CILANTRO (CORIANDER)LEAVES RAW
  • 0.25 tsp TURMERIC GROUND
  • 0.50 tsp GINGER GARLIC PASTE
  • 0.50 tsp CORIANDER POWDER
  1. Cut the bread slices into small cubes.

  2. In a pan, heat oil, add mustard seeds and allow to splutter. Add urad dal, curry leaves and saute until the urad dal color changes to golden brown.

  3. Add chopped onion and cook until the onion becomes soft.

  4. Add turmeric powder and cook until the turmeric powder loses its raw smell.

  5. Add ginger garlic paste and cook until the ginger garlic paste loses its raw smell.

  6. Add chopped tomatoes and cook until the tomato becomes soft. Add red chili powder, coriander powder, salt and cook for a few seconds until the spices lose its raw smell.

  7. Add eggs and cook until the eggs get cooked thoroughly. Add chopped bread pieces and mix gently. Cook for 2 – 3 mins and garnish with chopped coriander leaves.

Pesarattu is a healthy dosa with green moong dal flavored with green chilies and ginger. Moong dal dosa is easy to make without fermenting the batter.

Moong dal dosa:

Green moong dal is an excellent source of fiber, nutrients, and protein. The fiber content in the green moong makes us feel fuller for a long time. So, this moong dal dosa is a healthy alternative for the dosa made with white rice that is loaded with carbs. The best part in this dosa is, you do not have to set the batter for fermentation. You can make dosa immediately after grinding. So, you can just soak the green moong overnight and grind in the next morning in just a few minutes using the blender for a healthy and filling breakfast. Green moong dal with fresh ginger, cumin seeds, and green chilies helps to make a flavorful dosa. Check out the other low-carb dosa recipes, chickpea dosa and quinoa dosa.

Smart Cooking Tips:

1. You can replace the green moong with yellow moong dal but green moong dal is rich in fiber content compared to the yellow moong dal. If you are using yellow moong dal, it is not necessary to soak for 5 – 6 hours just an hour of soaking is enough.

2. Add green chilies according to your taste.

3. You can add little amount of rice or rice flour that helps to make a crispy dosa. If you using raw rice, soak rice with moong dal and grind with together with all other ingredients to a smooth batter. If you are using rice flour, add rice flour to the batter just before making dosa and mix well. I didn’t add rice or rice flour in this dosa still the dosa turned out crispy. Use non-stick skillet for making dosa that helps to make crispy dosas with less amount of oil.

4. Topping the dosa with caramelized onion and green chiles are optional.

How to serve moong dal dosa?

You can serve moong dal dosa with tomato chutney, peanut chutney or cilantro chutney.

Pesarattu is a healthy dosa with green moong dal flavored with green chilies and ginger. Moong dal dosa is easy to make without fermenting the batter.  

  • 1 cup GREEN MOONG DAL
  • 1 tsp CUMIN SEED
  • 2 no GREEN CHILIES
  • 1 tsp GINGER GRATED
  • 1 tbsp OIL
  • 0.50 tsp SALT TABLE
  1. Soak moong dal in water for 5 – 6 hours.

  2. Drain the water from the soaked moong dal. In a blender add moong dal, ginger, green chilies, cumin seeds, salt and grind to a smooth batter consistency by adding water little by little. 

  3. Optional: In a separate pan, heat oil, add chopped onion, green chilies and cook until the onion becomes soft. Keep it ready. In a hot skillet, pour a ladle of batter and spread into a thin circle. Drizzle oil on sides and cook until the dosa turns crispy. Top the dosa with the onion mixture and serve.

Churma Ladoo Recipe

Churma ladoo is a popular Indian sweet with deep fried baati, jaggery, and ghee. It is easy and simple to make in just a few minutes if you leftover baatis handy.

Healthy Churma Ladoo:

Traditionally, churma ladoo is made with deep fried baatis. Baati is a popular Rajasthani dish with wheat flour, sooji and ghee. You can bake or deep fry the baatis. For making churma ladoos deep fried baatis works well. I made baatis in the paniyaram pan (appe pan) without deep frying, the baatis turned out well just like the deep fried ones. Check out the recipe for baati. You can even add any of your favorite dry fruits and nuts in this ladoo that adds an extra nutrition and taste to the ladoos.

Smart Cooking Tips:

1. I made baatis in the paniyaram (appe pan), you can deep fry in the oil or ghee too.

2. For binding the ladoos I used warm milk, you can use warm ghee that helps to keep the ladoos good for a couple of weeks. If you are using milk as I did consume the ladoos within 3 days.

3. I add the chopped almonds and raisins in the ladoo. You can add cashew nuts or any of your favorite nuts.

4. Shape the ladoos when the jaggery is warm enough to handle by your hard. If the jaggery gets cooled down then it would become hard and difficult to mix with the other ingredients.

Serve churma ladoo as a snack or dessert.

Churma Ladoo Recipe

Churma ladoo is a popular Indian sweet with deep fried baati, jaggery, and ghee. It is easy and simple to make in just a few minutes if you leftover baatis handy. 

  • 1 cup Wheat Flour (atta)
  • 0.25 cup Sooji (rava)
  • 0.50 tsp Salt
  • 6 tbsp Melted Ghee
  • 0.25 tsp Ajwain
  • 3 to 4 tbsp Water (for kneading dough)
  • 0.50 cup Jaggery
  • 10 no Chopped Almonds
  • 10 no Raisins
  • 2 tbsp Milk (for binding ladoos)
  • 1 no Cardamom
  1. In a bowl, add wheat flour, sooji, salt, ajwain and mix well. Add 4 tbsp of melted ghee and mix well. Add water little by little and knead a firm dough. Cover and set the dough for at least 10 – 15 mins.

  2. Divide the dough into small balls and make a dent in the center gently as I shown in the picture using your thumb finger.

  3. Heat a few drops of oil or ghee in each mold in the paniyaram pan and place the rolled balls in the molds.

  4. Cover and cook over a low heat on both the sides until the baatis gets cooked thoroughly. It should be hard on both outside and inside.

  5. Break the baatis into small pieces, allow to cool thoroughly and grind to a fine powder using a food processor or mixer.

  6. In a pan heat the remaining 2 tbsp ghee, add powdered jaggery and cook until the jaggery gets meltdown completely.

  7. Combine the powdered baatis, melted jaggery, chopped nuts, freshly crushed cardamom or cardamom powder, raisins and mix well using a spoon or spatula. Add warm milk little by little and shape them into small balls when the mixture is warm enough to handle by your hand. Serve or store in an airtight container.

Sweet Somasi (somas) is an easy and quick Indian sweet recipes with coconut, nuts and raisins. A tasty and delicious South Indian sweet recipes for Diwali.

How to make sweet somasi?

Traditional somasi recipe is made with roasted grams and coconut. I tweaked the somasi recipe according to my taste by adding nuts and raisins. You can also make you own sweet filling. Kids would also love this somasi, my little son Aldrich like this sweet very much, so I make it often even for a snack. Those who do not like sweets also love this somasi because it is mildly sweet with crispy outer covering. The interesting thing about this recipe is you can tweak this recipe as much you want. If do not prefer powdered nuts, you can add chopped nuts or totally skip it. You can simply make filling with shredded coconut and sugar alone or you can even add khoya to the filling. If you make coconut filling in excess, don’t worry you can easily make sweet chapati with it.

Smart Cooking Tips:

1. I added my favorite nuts almonds and cashew nuts with coconut for filling. You can replace it with your favorite choice of nuts or powdered roasted grams.

2. Make sure to seal the edges properly before adding somasi into the oil. Because the small openings also make the filling come out when frying.

3. You can also dry roast the coconut before mixing it with powdered nuts, personally I like fresh coconut and sugar combo. So added as it is without roasting.

4. Adding raisins is purely optional, but raisins give nice sweet and chewy taste with coconut and nuts.

5. Deep fry the somasi in a medium flame, so that it will cook evenly on all sides.

6. If you are using frozen coconut thaw it completely before mixing it with flour.

Homemade sweets and snacks are the important part that makes your Diwali special. Laddoos like besan laddo, sooji laddoo, dates ladoo are the easiest sweet to make at home for Diwali. Sweet somasi is one such easy and quick sweet to make at home on festive seasons. You can easily make this sweet for diwali in an hour without any preparations. It tastes mildly sweet, so even who do not prefer sweets also like this dish. It is also an excellent snack for parties and picnics. Because of the coconut filling it won’t stays good for a long time. It remains good only for 2 – 3 days, so avoid storing it for a long time.

  • 1 cup ALL PURPOSE FLOUR
  • 1 tbsp SOOJI RAVA
  • 2 no CARDAMOM
  • 0.50 cup COCONUT
  • 10 gms ALMONDS
  • 10 gms CASHEW NUTS
  • 8 gms RAISINS SEEDLESS
  • 0.50 tsp SALT TABLE
  • 0.25 cup SUGARS GRANULATED
  1. In a bowl add all purpose flour (maida), salt, sooji and mix well. Add water slowly and knead a soft dough. Cover and set aside for 15 – 20 minutes.

  2. In the mean time start preparing for the filling, powder the nuts coarsely in a mixer or blender. In a separate bowl add shredded or grated coconut, sugar, powdered nuts, raisins, crushed cardamoms and mix well.

  3. Divide the dough into small balls, dust it with flour to avoid sticking to the rolling pin and roll it into a flat thin circle. Place the coconut filling in the center and apply water on half of the circle edges (water helps to seal the somasi), fold and seal the edges properly.

  4. Deep fry the somasi in a hot oil until the color changes into golden brown and serve.

There are various methods to cook white rice, but I personally found cooking white rice on a stove top is the quickest method.

Methods of cooking White Rice:

There are various methods to cook white rice, and also everyone have their unique style according to their taste. You can cook white rice in a rice cooker, pressure cooker, boil and strain method or even in a microwave.

Personally, I cook white rice using a large pan on the stove top because it is easy and quick method also rice turns out fluffy compared to cooking in a rice cooker. I just soak white rice for 20 minutes and cook it in the boiling water.

If you want to make fried rice, soak rice for 30 minutes and add 1 cup of rice to 1.50 cups of water. Allow it to cool completely before preparing fried rice.

Add water depending on the quality of a rice. I used long grain Basmati Rice, so I added 2 cups of water to 1 cup of rice.

How to serve White Rice?

You can serve white rice with curries, yogurt, and soups. You can also make fried rice using the white rice.

  • 1 cup BASMATI RICE
  • 2 cups WATER
  • 1 tsp SALT TABLE
  1. Soak rice in cold water for 20 minutes and drain the water completely from rice.

  2. In a deep pan add water, salt and bring it to boil. When the water starts boiling add rice and mix gently. 

  3. Cover and cook until the water gets absorbed by the rice completely. Open the lid occasionally and give a quick stir.

MANGO KULFI – EASY AND DELICIOUS KULFI

Mango kulfi is an easy and delicious kulfi recipe with mango flavor. It is an excellent summer dessert tastes creamy and flavorful with mango, cream, and nuts.

Kulfi molds are available in different sizes and shapes that look more similar to ice popsicle molds. If you have ice popsicle molds handy, you can use it for making kulfis. Plastic cups can also be used for making kulfis. Especially, if you are making kulfi for parties with a huge crowd, plastic cups are more useful. If you are making only for few members ice popsicles or kulfi molds are a better option. You can reuse ice popsicle molds in many recipes like fresh fruit popsicles.

Kulfi:

Kulfi is an Indian ice cream, tastes so delicious, creamy, slightly dense compared to ice cream and flavorful. There are varieties of kulfi recipe like mango kulfi, kesar pista kulfi, and badam kulfi. Traditionally kulfis are made by boiling and condensing milk over a low flame to a thick and creamy consistency and flavored with sugar, cardamom, dry fruits, and saffron. It is a lengthy and time-consuming process. Nowadays, kulfis are easy and simple to make at home with a store bought condensed milk, evaporated milk and cream. I made this simple mango kulfi at home with fresh mango puree and store bought milk products. It turned out so creamy and delicious with a perfect kulfi texture.

Smart Cooking Tips:

1. You can use store bought mango puree instead of fresh mango puree. If you are using fresh mango puree make sure to choose sweet, ripe and less fibrous mangoes like alphonso mango. If the mangoes are not sweet enough add sugar to the mango flesh and blend to a smooth puree.

2. Adding cardamoms, saffron, and dry fruits are optional.

3. If you do not have kulfi molds. You can use small plastic cups and bamboo skewers or craft sticks or you can just store in a freezer proof bowl and serve as an ice cream.

How to serve mango kulfi?

Serve mango kulfi as a dessert or snack.

MANGO KULFI – EASY AND DELICIOUS KULFI

Mango kulfi is an easy and delicious kulfi recipe with mango flavor. It is an excellent summer dessert tastes creamy and flavorful with mango, cream, and nuts. 

  • 3 no ALPHONSO MANGO
  • 2 cup HEAVY WHIPPING CREAM
  • 14 oz SWWETENED CONDENSED MILK
  • 2 cup MILK
  • 2 no CARDAMOM
  • 2 no SAFFRON
  • 10 gms PISTACHIOS
  • 2 tsp SUGARS GRANULATED
  1. In a pan add milk and boil over a medium flame until the milk quantity reduces to a cup. Keep stirring and scraping the bottom and sides of a pan to avoid the milk getting burned. Allow the milk to cool completely.

  2. Wash, peel, and blend the mango flesh to a smooth puree. Coarsely grind the pistachios, cardamom seeds, sugar, and saffron together using a blender.

  3. In a large bowl, add heavy whipping cream and beat with an electric hand mixer until smooth and creamy.

  4. Add condensed milk, mango puree, milk, coarsely ground pistachios mixture and mix well. Pour into kulfi molds or plastic cups and freeze for 8 hours or overnight. 

  5. Place the molds in water for 10 – 20 seconds and gently remove the kulfis from molds. Mango kulfi is ready to serve.
